EASY TORTILLA PIZZA
This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place tortilla on a baking sheet. Brush with olive oil; sprinkle garlic powder, salt, and pepper on top.
- Bake in the preheated oven until golden, 3 to 5 minutes. Remove tortilla from the oven and spread tomato sauce on top. Arrange chicken breast, green bell pepper, and green onions over tomato sauce; cover with mozzarella cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes. Sprinkle oregano over cheese. Slice pizza into wedges using a pizza cutter.

"THE SOFTIE" SOFT-SHELL CRAB PIZZA

Steps:
- Heat a large saute pan over medium heat; add 1/4 cup olive oil. Place the leeks in the pan and cook slowly, stirring to prevent browning, until soft and wilted, about 10 minutes. Set aside.
- Meanwhile, bring the remaining 1 1/4 cups olive oil to a simmer in a small saucepot; add the garlic. Reduce heat to low and cook until garlic is soft but still white, an additional 10 to 15 minutes. Set aside.
- Preheat the oven to its highest temperature with a pizza stone inside; at least 450 degrees F.
- Once the dough is at room temperature, it should be soft and pliable and shouldn't shrink back when you press it. Flatten a ball into a disc. (It is okay if the flattened disc isn't perfectly round at this point.) Place disc on a well-floured work surface and stretch the dough by hand into an 8- to 9-inch round that is 1/4-inch-thick, not pressing out the air bubbles. Place on a pizza peel or dry cutting board layered with a sprinkle of semolina flour.
- To assemble the pizza, spread the garlic oil evenly over the dough with a 1-ounce ladle. Add 3/4 cup leeks over the garlic oil and spread evenly. Place a soft-shell crab in the center of the pizza. Transfer the pizza to the oven using a smooth, quick motion to slide the pizza from the peel or cutting board to the stone. Bake until crust is browned evenly, crab is crispy and juices are bubbling, 9 to 16 minutes. Remove from the stone with a pizza peel. Cut into slices and garnish with a sprinkle of seafood seasoning, fresh shaved Parmesan and parsley and serve with lemon wedges. Repeat with remaining ingredients to make 1 more pizza. Enjoy.
CRISPY TORTILLA PIZZA AND SAVINGS SALAD

- For the caramelized onions: Cook the onions in the butter and oil in a skillet over medium-low heat, stirring occasionally, until caramelized, about 20 minutes. Set aside.
- For the pizza: Cook the sausage in a skillet, breaking up with a wooden spoon, until crumbled and cooked through. Set aside.
- Adjust an oven rack in the middle position and preheat the broiler to high. Add the oil to a large nonstick skillet over medium heat, then add a tortilla; this will start crisping the bottom of the tortilla before it goes in the oven. Almost immediately, build the pizza right in the pan, starting with a quarter of the tomatoes followed by the a quarter of the cheese, making sure the cheese goes all the way to the edge and beyond. Then add a quarter of the onions and a quarter of the sausage. Transfer the skillet to the broiler and cook until the cheese is golden brown and melted, 4 to 5 minutes. Repeat with the remaining pizza ingredients to make 3 more pizzas. (You can hold the pizzas in a warm oven while you make the others.)
- For the salad: Place the lettuce in a salad bowl. Top with the tomatoes and bacon and drizzle with dressing.
TORTILLA PIZZA
Steps:
- Preheat the oven to 375 degrees F.
- Put the tortillas on 2 baking sheets. Top each tortilla with the sliced tomatoes. Divide the beef and vegetables from the leftover Fajita Skewers over the tortillas. Sprinkle the cheese evenly over the top and bake in the oven until the cheese is melted and golden and the tortillas are crispy, about 10 minutes. Transfer to serving dishes and serve.
- In a large resealable bag, mix together the lime juice, garlic, hot sauce, canola oil and chili powder. Season with salt and pepper to taste. Remove 1 tablespoon of the marinade and set aside.
- Slice the peppers and onions into one inch square pieces. Place in the bag with the marinade. Slice the meat into thin strips against the grain and put into the bag with the marinade and vegetables and mix well to coat everything with the marinade. Place the bag in a large bowl incase it leaks and refrigerate for one and half hours.
- Mix the reserved marinade with the sour cream and refrigerate.
- If using wooden skewers soak in water for 30 minutes before threading on the beef and vegetables.
- Remove the meat and vegetables from the refrigerator and let come to room temperature, about 30 minutes. Thread the beef and vegetables onto the skewers. Each skewer should get 4 pieces each of the pepper and onion and 3 pieces of the beef, alternating as you thread them onto the skewer. Cook the skewers on a grill pan or outdoor grill over medium high heat until meat is medium rare, about 3 to 4 minutes a side. Garnish with the flavored sour cream and cilantro.
ITALIAN TORTILLA PIZZA

TORTILLA CRAB PIZZA
A throw together pizza while starving! :) Serve with a green salad and it is plenty for two-three people -- or serve as a quick appetizer for a few people! NOTE: To prevent a soggy crust, immediately slide baked pizza onto a wire rack and cool for several minutes before slicing/serving!

- Preheat oven to 425F for Pyrex, or 450F for a metal pizza pan.
- Spread olive oil on pizza pan (I use Pyrex!) to prevent the tortilla from sticking to the pan.
- Place flour tortilla onto pizza pan and spread on cream cheese.
- Top with imitation crab meat and onion.
- Lightly sprinkle with garlic powder, salt, black pepper, and cayenne.
- Top with swiss and cheddar cheeses.
- Top cheeses with the snipped basil.
- Bake at 425F (Pyrex) or at 450F (metal) for 15 minutes.
- Remove from oven and immediately slide pizza onto a wire rack so the crust doesn't sweat!
- Cool for 10-15 minutes, slide the pizza back onto the pizza pan and cut into 8 pieces, with a pizza cutter.
- Three-four pieces with a green salad is plenty for two-three persons, or as an appetizer for a few folks!
- NOTE: Use whatever cheese mixture you like ~ my photo with the blue background is made with swiss and mozzarella, with the basil underneath where it can't be seen!

- Preheat oven to 450F; place inside a 12 inch nonstick pizza pan to allow it to preheat with the oven.
- Place tortilla on a plate or board from which it can be easily transferred. Brush the tortilla with the olive oil; spread half the cheese to within one inch of the edge. Pour the sauce, starting in the center and work outwards; spread remaining half of cheese over the tortilla.

- Roll the pastry to 1/4"/5mm.
- Mix the finely chopped chilli with the sun-dried tomato paste or finely chopped sun-dried tomatoes and spread all over the pastry. Look for the tubs of sun-dried tomato pesto beside the regular basil pesto in the fridge section of your supermarket. It makes a great tasty pizza sauce.
- Bake in a hot oven (200C or 400F) for 8 minutes.
- Zest and juice the lime.
- Combine the shredded crab meat, lime zest, lemongrass and a little of lime juice.
- Slice the mozzarella into about 6 slices.
- Remove the pastry from the oven and scatter the crab mixture and mozzarella slices over the top. Add a grind of black pepper and salt to taste.
- Put back in the oven for about 10 minutes until the cheese is golden and bubbling.
- To serve, scatter the rocket over the pizza while still hot. Thin the mayonnaise with the rest of the lime juice and drizzle over the rocket.
