PAN FRIED SWEET POTATOES

I like coming up with new ways to serve foods so that I don't get bored with the same dishes all of the time. I decided to try preparing my sweet potatoes in various ways and this is one that I came up with. Very simple and can be modified to suit your taste. The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

Pan Fried Sweet Potatoes image

Steps:

  • Dice sweet potatoes no thicker than 1/4 inch thick.
  • Place pan on medium heat to begin warming. While waiting dice onion and prepare garlic.
  • Place oil in pan and add potatoes, garlic, and onions and then coat well(be sure that oil is not left to heat up or it will scorch the onions and garlic).
  • Sprinkle salt and pepper just after adding other ingredients to the pan.
  • Allow the potatoes to cook for a few minutes and check for browning. Keep temperature from getting too hot.
  • Stir occasionally until potatoes are to your desired doneness (approx 10 minutes for me.
  • Turn off heat and add brown sugar while still hot. Stir well and serve.
  • * variation* try using butter instead of olive oil for a more sweet and traditional flavor.

Skirt Steak and Sweet Potato Fries image

Steps:

  • Preheat the oven to 425 degrees F. Preheat a grill pan over medium-high heat.
  • In a bowl, combine the salt, black pepper, cumin, coriander, oregano, cayenne and sugar. Add the fries to a sheet pan and sprinkle with 1 teaspoon of the seasoning blend. Bake, tossing halfway through, until crisp, 24 to 26 minutes.
  • Brush the steaks with the oil and sprinkle with the remaining seasoning mix. Grill until they are done to your liking, 3 to 4 minutes per side for medium-rare. Remove the steaks from the grill pan and let rest for 5 to 7 minutes.
  • Meanwhile, make the tangy herb drizzle. Combine the herbs, vinegar, red pepper flakes and garlic in a small bowl. While mixing with a fork, drizzle in the olive oil. Season with a pinch of salt and pepper.
  • Remove the fries from the oven. Slice the steaks against the grain, and shingle around the fries on the sheet pan. Drizzle the steak with some of the herb drizzle, serving the remainder on the side.

  • Whisk first 6 ingredients together in mixing bowl. Place steaks in shallow glass baking dish and pour marinade over top. Turn several times to coat completely. Refrigerate covered at least 30 minutes.
  • Heat butter and remaining 2 T. oil in large heavy skillet over medium-high heat. Add potatoes and cook, turning frequently, until golden and crisp, about 10 minutes. Season with salt and pepper and keep warm.
  • Heat broiler or grill.

Sweet Potato Steak Fries image

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed sheet pan with foil. Cut the ends off the potatoes, then cut the potatoes in half lengthwise. Cut into thick wedges, keeping all of the fries evenly sized. Spread the fries on the lined sheet pan and drizzle with a few tablespoons of olive oil, a big pinch of kosher salt and lots of freshly ground pepper. Sprinkle to taste with paprika and garlic powder and toss everything to evenly coat. Roast until brown and crispy on the bottoms, 10 to 15 minutes.
  • Flip all the fries, and return them to the oven to roast until they are brown and crispy, another 10 to 15 minutes. Allow to cool slightly before serving

Marinated Grilled Flank Steak with BLT Smashed Potatoes image

Steps:

  • Mix garlic, steak seasoning, smoked paprika, chipotle or cumin, hot sauce, Worcestershire sauce and vinegar. Whisk in extra-virgin olive oil. Place meat in shallow dish and coat it evenly in marinade. Let stand 15 minutes.
  • Cut larger potatoes in half, leave very small potatoes whole. Place potatoes in a pot and cover with water. Bring to a boil and cook potatoes 12 to 15 minutes until tender.
  • Heat a grill pan or outdoor grill to high heat.
  • Cut leek in half lengthwise. Chop into 1/2-inch pieces. Place leeks in big bowl of water and release all the dirt from them with a good swish, separating all the layers. Drain leeks in a colander.
  • Grill flank steak 6 to 7 minutes on each side.
  • Put a drizzle of extra-virgin olive oil into a hot nonstick skillet over medium high heat. Cook bacon 3 to 5 minutes until it begins to crisp and has rendered most of its fat. Add leeks to the skillet and cook 3 to 5 minutes more until the leeks are tender.
  • Drain the potatoes and return them to the hot pot. Smash the potatoes with the chicken stock. Add the BLT: bacon, leeks and tomatoes to the potatoes and continue to smash. Season the potatoes with salt and pepper to your taste.
  • Remove flank steak from grill and let juices redistribute before slicing. Thinly slice meat on an angle, cutting the meat against the grain. Serve sliced flank steak next to BLT potatoes and top potatoes with a dollop of sour cream.

Most of my experiments aren't worth saving, but I actually want to remember what I did this time so am posting the recipe for the brown sugar caramelized sweet potatoes that I made. This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

Fried Sweet Potatoes image

Steps:

  • Slice the sweet potatoes thinly, approximately 1/4-1/2 inch thick.
  • Melt butter in a large hot frying pan over medium-high heat, then places slices in the pan in a single layer. Sprinkle with salt.
  • Fry the potatoes until lightly browned on one side, then flip over each slice. You'll need to watch them carefully and move the slices in the hottest part of the pan to the edges so that they all get browned. Adjust the heat down to medium if needed to keep them from browning too quickly. Total browning time took me about 5-7 minutes.
  • When both sides are lightly browned, sprinkle brown sugar and cinnamon across the top. Wait 1-2 minutes and then toss the potatoes until the brown sugar is caramelized (approx 1 more minute).
  • Remove from pan and serve immediately.

Steps:

  • Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. Repeat with remaining 1/2 teaspoon butter and steak. Cook without moving steaks until a golden brown crust forms, 3 to 4 minutes.   • Add steak marinade ingredients to a gallon Ziplock bag then squish to combine. Slice flank steak in half if too large to fit inside an 11" or 12" cast iron skillet, then add to marinade and refrigerate for 1-6 hours.
  • Meanwhile, heat oven to 425 degrees then spray a baking sheet with nonstick spray. Add sweet potatoes then drizzle with extra virgin olive oil and season with garlic powder, salt, and pepper. Toss with fingers to coat then spread potatoes into an even layer and roast for 25-30 minutes, or until golden brown and tender, stirring with a spatula halfway through.
  • Heat the 11" or 12" (or larger) cast iron skillet over heat that's just a touch below high. Add enough high heat cooking oil to create a very thin layer on the bottom of the skillet then, when it begins to smoke, add the steak (add just 1 piece if you cut it in half.) Be careful as the oil might spit a bit, and turn the fan up, too! Let steak sear for 2 minutes on each side for medium-rare, then transfer to a cutting board and repeat with second piece of steak. If you prefer your steak medium or medium-well, add both pieces of steak back into the skillet off the heat then let the residual heat of the skillet continue to cook the steak for severalminutes. Let steak sit for a minimum of 7 minutes on the cutting board before slicing into thin strips against the grain.
  • Add all ingredients for the Avocado-Cilantro Drizzle except water to a small food processor or blender then pulse until roughly chopped. Add 2 Tablespoons water then process until smooth, adding up to 2 more Tablespoons water to get the sauce to a smooth but not runny consistency. Taste then add more salt and pepper, or lime juice if necessary.
