My niece introduced me to this colorful recipe some time ago. I make it when I have buffets or large gatherings because it can be prepared hours ahead. This is a wonderful way to use a bumper crop of tomatoes. -Myrtle Matthews, Marietta, Georgia

- Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours.

Steps:
- In a bowl, whisk together oil, vinegar, mustard, garlic and sugar.
- Add salt and pepper to taste.
- Add tomatoes and onion and let stand at room temperature for 30 minutes to blend the flavours.
- Drain off the marinade.
- Broil bread slices for 1 to 2 minutes per side or until golden brown.
- Top with cheese and broil until cheese melts and bubbles.
- Divide tomatoes and oil mixture among slices.
- Sprinkle with parsley and serve immediately.

Steps:
- Mix all ingredients together and set on counter stirring occasionally.
- The salt will bring out the juice of the tomatoes.
- Taste and add more seasonings to your personal taste.
- You can use fresh basil or oregano if preferred, just remember to chopped finely and use a little less than dried.
- USES: Serve with almost any meal as a side.
- On top of a green salad (no dressing necessary!).
- Use as a topping for bruschetta--just chop tomatoes instead of slicing.
- Use for caprese salad--add sliced buffalo mozzarella and you're done.
- have some leftover juice: place some sliced chicken breasts and marinate over night, then carefully remove the chicken and quickly sauté them until done. Add remaining juice and tomatoes, boil for 1-2 minutes and then add cooked penne pasta, toss, and simmer for 5-6 minutes.
- JUICE USES: **you can reuse the "marinade" with new tomatoes. Just add some more sliced tomatoes to the juice and let sit for about 20 minutes.
- OR use the juice and marinate boneless chicken breast overnight in refrigerator, grill and serve or slice chicken and top a Caesar salad with it.

Refrigerate leftovers and serve over eggs, tossed with warm pasta or as a sauce for roasted chicken or fish.

- Working over a large bowl, grate flesh side tomatoes on the large holes of a box grater until all that's left is the tomato skin; discard skin. (You should have about 1 1/2 cups juice and pulp.) Stir in oil, capers and caper brine, shallot, vinegar, salt, pepper, garlic and 1/4 cup cold water. Add Swiss chard and cherry tomatoes and mix well. Let stand for 30 minutes, stirring occasionally.
- Stir lentils into tomato-marinated greens and mix well. Spoon mixture over toast. Drizzle with oil, top with cheese and serve immediately.

- Place a rack in the upper third of your oven and preheat the oven to 400 degrees F. Arrange the bread in a single layer on a parchment lined baking sheet. Brush each side with 1/2 teaspoon olive oil. Bake for 5 minutes, then flip the slices and return to the oven. Continue baking until the bread is nicely toasted, about 5 additional minutes.
