Steps:

  • Wash and cut peppers, onions and broccoli spears. With a damp cloth, gently wipe debris from mushrooms.
  • Carefully spear vegetables onto bamboo skewers. I like to arrange the veggies in the order of pepper, onion, broccoli & mushroom. Note: If desired, you may soak the bamboo skewers in water before using, but I feel it is not necessary due to their being soaked well with the marinade.
  • Place skewers in a large, rectangular resealable container. Pour dressing liberally over veggies. Marinate for 6-12 hours or overnight, making sure to carefully flip the container upside-down and shake occasionally to redistribute the dressing.
  • Grill for 10-15 minutes over medium-high heat or until vegetables reach the desired crisp, done-ness.
  • To serve, slide vegetables off the skewer onto each person's plate.

FRESH CAPRESE VEGETABLE KABOBS

This is a beautiful appetizer dish or side dish. It's great for potlucks and it always gets lots of compliments. The key is to use the freshest of ingredients. I buy the fresh basil and tomatoes from my farmer's market or (if it's winter) our local fresh market. NOTE: If you can't find little cherry sized mozzarella, you can buy the large sized balls and cut them into bite sized pieces.

This is a recipe I found in TOH magazine and posting for safe keeping. Time doesn't include marinading time, so allow at least 2 hours for marinating, but more is better on the flavor. Feel free to add any veggies of your choice.

  • If you are using wooden skewers, soak them in water for at least 30 minutes before grilling. Steam the cauliflower and broccoli for 10 minutes (or boil them for 4-5) until just slightly softened. Mix together all of the marinade ingredients in a large bowl and add chopped vegetables. Stir to coat and let sit for at least 30 minutes, stirring occasionally to evenly coat them.
  • Once everything is finished soaking/marinating, preheat the grill (to medium heat) or broiler. While it is heating slide the vegetables onto the skewers, distributing them evenly. If using the grill, make sure to grease the grate well so the vegetables don't stick and grill them for about 2-3 minutes per side (rotate them as if they have four sides). If using the broiler, place them on a well-greased cookie sheet and broil them for 2-3 minutes per side (again, four sides).
  • While the kebabs are grilling, pour the leftover marinade into a saucepan (remove any leftover vegetables first) and add 1 Tbsp arrowroot or cornstarch. Heat over medium heat, stirring frequently, until it thickens to a thick gravy consistency. Pour into a serving dish and use as a dipping sauce for the vegetables.
