MARINATED TOFU FOR MEAT-EATERS WHO HATE TOFU
This is the tofu recipe that opens everyone's closed minds about this much maligned ingredient. The texture of the tofu was described as "similar to chicken and fish but not." I came up with it after many (failed) attempts at creating the perfect meatlover's tofu dish. The key is in the freezing of the tofu, so make sure you plan ahead. Prep time does not include freezing time.

- Place the tofu (still in its packaging) into the freezer for at least 24 hours. Keeping it in there longer doesn't hurt it.
- Remove the tofu from the freezer and defrost by bringing a pot of water to a boil and placing the frozen block of tofu (still in its packaging) in the pot for 10 minutes or until defrosted.
- Remove the tofu from the packaging (finally!) and cut the block laterally in half so you have two block-sized slabs that are half the width.
- Slice each slab lengthwise into three and place on a clean dish towel or paper towels. Cover the six pieces with another dish towel and place a cutting board or baking tray or other flat object on top. Place heavy cans or books onto the board and let sit for 15-30 minutes.
- Cut the tofu lengths into cubes and place into marinade for a minimum of 30 minutes.
- Remove from the marinade and dust the tofu cubes with flour.
- Heat the oil in a frying pan over medium heat.
- Shallow fry the cubes until all sides are golden brown and crispy.
- Serve hot with rice or couscous and a puddle of the marinade as a dipping sauce.

- Whisk rice wine vinegar, soy sauce, brown sugar, garlic, and red pepper flakes in a bowl. Arrange in a single layer in a baking dish. Drizzle with marinade. Cover and refrigerate for 2 hours or overnight.
MARINATED TOFU STEAKS
The recipe for this marinade is inspired by the excellent Toronto vegetarian restaurant Fresh, where "even the tofu tastes good" (to quote a dear, dear non-tofu-loving friend), and their cookbook "Fresh at Home". These are delicious and you can serve them with salad, over rice, or in a burger or wrap. Overnight marinating time included in prep time.

- Slice the tofu block into steak-sized rectangles.
- Arrange tofu slices in a shallow dish so they overlap as little as possible.
- Combine other ingredients in a bowl and mix well.
- Pour over tofu steaks. If there isn't enough liquid to cover the steaks, add some more water and swish it around a bit until well combined.
- Cover and refrigerate overnight (or as long as you've got).
- Cook marinated tofu steaks on grill or in non-stick skillet.
- Give it a few minutes on each side, or until lightly browned.

MARINATED TOFU
Baked tofu is crispy on the outside, creamy inside, and loaded with flavor. Removing as much water as possible from the tofu before cooking it, as in this recipe, helps the tofu absorb the flavors of the marinade and cook up crisp rather than mushy. It is delicious eaten as is or in sandwiches, salads, or stir-fries. Serve hot or cold.

Steps:
- 1. Slice the tofu into 1/2-inch-thick slabs and lay the slices on top of paper towels. Use more paper towels (you'll probably need three) and firmly pat the tofu in order to remove as much of the water as possible. Cut the tofu into 3/4-inch cubes.
- 2. In a medium bowl, combine the soy sauce, orange juice, sesame oil, and canola oil. Add the tofu cubes and toss gently. Cover and let the tofu marinate in the refrigerator for at least 30 minutes, and up to 24 hours.
- 3. Preheat the oven to 450°F. Spray a large shallow baking dish with cooking spray. Place the tofu in a single layer in the baking dish. Bake for 25 to 30 minutes, or until golden brown.
