FAVORITE MARVELOUS MUSHROOM SOUP

Meet the Cook: Soup is tops on the list of things I love to cook. I've used this one as the beginning course to a meal...and as a Sunday supper with hot rolls and butter. When we had a small restaurant in Arizona, I made my mushroom soup every day. We never had any left over. It got raves at a deli I worked at, too. I never cooked very much until my husband and I were married, 48 years ago. We're the parents of three grown sons and the grandparents of 12. -Beverly Rafferty, Winston, Oregon

Favorite Marvelous Mushroom Soup image

Steps:

  • In a Dutch oven or soup kettle, saute the mushrooms, onion, garlic, tarragon and nutmeg in butter until vegetables are tender. Stir in flour until smooth. Gradually add broth; bring to a boil, stirring constantly. Reduce heat to low; slowly add sour cream. Cook and stir until smooth. Stir in cream and milk. Add lemon juice, hot pepper sauce, salt and pepper. Heat through but do not boil.

  • In a large saucepan, cook onions and garlic in butter over medium-low heat until tender. Reduce heat to low; add the mushrooms. Cook for 8-10 minutes or until tender, stirring occasionally. , Add the cream, broth, salt and pepper; cook and stir over low heat until heated through. Garnish with Parmesan cheese and parsley if desired.

  • Preheat oven to 375 degrees F (190 degrees C). Grease a shallow 2-quart baking dish.
  • Remove stems from mushrooms and finely chop stems. Combine chopped stems, Parmesan cheese, mozzarella cheese, green onions, olive oil, garlic, salt, and black pepper in a bowl. Spoon filling into mushroom caps; arrange caps in the prepared baking dish.
  • Bake in the preheated oven until the mushrooms are tender, 10 to 15 minutes.

Steps:

  • Melt butter in a large pot over medium heat. Cook mushrooms in butter in batches, turning occasionally, until golden brown, about 10 minutes. Add a portion of the garlic at the end of each batch and cook until fragrant, about 1 minute. Remove mushroom mixture to a plate.
  • Add onion to the pot. Cook and stir until onion has softened and turned translucent, about 5 minutes. Add mushroom mixture, thyme, and parsley. Pour wine into the pot and cook while scraping the browned bits of food off the bottom of the pan with a wooden spoon, about 3 minutes.
  • Sprinkle flour over the mixture and stir until well incorporated. Add broth, bouillon, salt, and pepper and bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally, until thickened, about 10 minutes.
  • Stir in cream and enough milk to reach desired thickness. Cook until heated through.

Steps:

  • Heat oil in large skillet over medium heat.
  • Add mushrooms and cook for about 5 minutes or until brown.
  • Combine water, vinegar and mustard and add to skillet.
  • Simmer until liquid is reduced by half.
  • Remove from heat and add lemon juice.

Steps:

  • Preheat oven to 300 degrees.
  • Cut bread into slices and cube. Spread bread out on baking sheets in single layers and bake in oven for 30 minutes. Remove and allow to cool completely.
  • Increase oven temperature to 400 degrees.
  • Butter shallow, 2 quart baking dish.
  • Melt butter in large skillet over medium heat; add celery, onions, salt and pepper, and cook until just beginning to brown, about 15 minutes.
  • Add mushrooms to skillet. Cook, stirring occasionally, until liquid has evaporated and mushrooms are tender, about 10 minutes. Transfer to large mixing bowl and allow to cool.
  • Add bread cubes to bowl and toss with mushroom mixture. Gently stir in broth and water. Season dressing to taste with salt and pepper. Add eggs and gently combine.
  • Spoon dressing into buttered baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake additional 25 minutes.
  • Serve warm.
