Steps:

  • Beat the eggs in a bowl until smooth. Add the seasoning and mix in the vegetables and spices. Mix well
  • Heat the oil in a pan and add the egg mixture. Draw the edges into the centre, allowing the uncooked mixture to fill its place. Turn the heat down and cook until firm, then put under a grill for a couple of minutes until crispy on top.
  • Garnish with freshly chopped coriander and serve immediately.

Steps:

  • Dice red and yellow onions into 3 different sizes.
  • Combine eggs, onions, chili powder, turmeric, rock salt, and pepper in a large bowl; mix until well combined.
  • Heat oil in a large nonstick skillet over medium-high heat until shimmering. Pour in egg mixture, making sure it's evenly distributed in the skillet. Lower heat to medium, cover, and cook for 1 minute. Cut omelette into 8 pieces and continue to cook until egg starts to brown around the edges and appears to have set. Carefully flip with a spatula and cook for 2 more minutes.

Steps:

  • Heat oven to 220C/200C fan/ gas 7 and lightly oil four 200ml ramekins. Grate the courgettes and squeeze really well, removing as much liquid as possible. Put all the ingredients except the feta in a large jug and mix really well.
  • Pour into the ramekins, scatter with the feta and bake on a baking sheet for 20-25 mins until risen and set. You can serve the muffins hot or cold with salad, slaw or cooked vegetables.

Steps:

  • Heat the oil in a non-stick frying pan, and fry the spring onion, chili, garlic and turmeric until soft. Add the other spices and fry for another minute. Stir occasionally.
  • Add the eggs, swirling the pan to help the eggs set underneath.
