MASCARPONE CREME "CUSTARD"

I use this instead of custard when I make a fruit tart. Alternatively, it works great for making a parfait with strawberries, mini chocolate chips, and shortbread cookie pieces. Prep time include 30 minutes in the refrigerator.

Mascarpone Creme

Steps:

  • Blend mascarpone, milk, powdered sugar with an electric mixer.
  • Pour water into a microwave safe bowl or a saucepan, then sprinkle gelatine on top.
  • Allow gelatine to bloom in water for at least 30 seconds.
  • Boil gelatine-water mixture for at least 30 seconds, then remove from heat.
  • Combine gelatine mixture, mascarpone mixture, and vanilla using electric mixer.
  • Allow mascarpone creme to set slightly in refrigerator for about 30 minutes, then blend again with mixer.
  • Use this creme with pastries, fruit tarts, or parfaits.

4 ounces mascarpone (or Cream Cheese)
1/4 cup milk (or Cream)
1/3 cup powdered sugar
1/4 cup water
1 teaspoon unflavored gelatin
1/2 teaspoon vanilla

Steps:

  • Mix the berries and cherry jam together, and spoon into your trifle bowl. Scatter over the madeira cake and push down a little into the berries.
  • Put the custard, mascarpone and 3 tbsp sugar in a bowl together and beat until smooth, then dollop all over the trifle. Put the double cream, remaining 2 tbsp sugar and sherry in a bowl and beat until soft peaks form. Cling film both the trifle bowl and cream and chill until ready to serve. You can do this up to 24 hours in advance.
  • To serve, spoon the sherry cream all over the trifle, then scatter with your favourite decoration.

  • Use a handheld or stand mixer fitted with a whisk attachment, beat the heavy cream and vanilla extract together on medium-high speed until medium peaks form, about 3-4 minutes. Scoop the whipped cream into the extra medium-sized bowl and set aside.
  • With a handheld or stand mixer fitted with the same whisk attachment, beat the mascarpone and rum together on medium speed until smooth. I didn’t bother cleaning the whipped cream out of the bowl or whisk.
  • Place a heat-proof bowl over a small pot of simmering water over medium-low heat. Don’t let the water touch the bottom of the bowl. Using a whisk to mix the egg yolks and 1/4 cup (50g) of granulated sugar together until light and foamy, about 5 minutes. Remove from the heat and immediately pour it into the mascarpone mixture. Beat on medium speed until combined.
