Maya Angelou -- Her Childhood Favorite, Grandmother's Red Rice image

Steps:

  • Fry the bacon and then chop the cooked bacon, leaving about 1 TBS of bacon grease in the pan (cool the remaining grease for any use later).
  • Cook the chopped onion and peppers a few minutes. Then add everything else (having drained the tomato juice from the can and topped off with water to make 1 cup of liquid).
  • Bring to a boil and cook 3-4 minutes. Stir.
  • Turn the heat down to low, cover and cook another 15 minutes or so.
