Steps:
- Place a soup pot over medium high heat. Add the olive oil and heat. Add the chopped onion and celery to the pot and cook, stirring with a wooden spoon, until the vegetables are soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add crushed tomatoes and their juices, beef broth, tomato paste, 1/4 teaspoon of Italian Essence, and 1/2 teaspoon of salt and stir to combine. Bring to a low simmer and simmer for 15 minutes.
- While the broth simmers, make the meatballs. In a medium mixing bowl, combine the ground beef, ground pork, eggs, 1/3 cup Parmesan, bread crumbs, 3/4 teaspoon of the Italian Essence, and 1/2 teaspoon of the salt and, using clean hands, mix until thoroughly combined.
- Divide meat into tablespoons and roll into smooth balls with your hands. Set the rolled meatballs aside on a plate or other flat surface. Wash your hands.
- Carefully add the meatballs to the simmering broth. Gently stir, so as not to break up the meatballs Add the remaining 1/4 cup grated Parmesan. Simmer for 20 minutes, or until meatballs are cooked through.
- Add the ditalini and spinach to the hot soup, stir well, and cook for 15 minutes, or until the pasta is cooked through. Stir in the chopped basil and serve the soup in wide bowls, garnished with additional grated Parmesan, if desired.

- For the meatballs: Preheat the oven to 450 degrees F.
- In a bowl, combine the ground beef and breadcrumbs. Add the milk, onion, parsley, salt, pepper, garlic and egg. Mix to combine.
- Scoop out 2 tablespoons of the meatball mixture and roll into a ball. Continue with the remaining meatball mixture, making about 40 meatballs. Arrange the meatballs in a single layer in a large rectangular baking dish or foil pan. Bake, uncovered, until the meatballs are cooked through, about 25 minutes.
- Pour the marina over the meatballs, then continue to bake until the sauce is heated through, about 10 minutes more. Toss the meatballs to coat in the sauce and set aside.
- For the rolls: Turn the oven temperature down to 375 degrees F.
- Stir together the butter and garlic in a small bowl. Tear off the tops of the rolls, creating a nice boat to hold the meatballs. Transfer the rolls and torn pieces to a baking sheet and brush generously with the garlic butter. Bake until golden brown, about 10 minutes.
- Build the meatball subs: Load 5 meatballs into each roll. Spoon over some of the sauce. Top with some onions and sprinkle over the basil and Parmesan. Serve with more sauce and the toasted bread pieces.
- Reheating instructions: Reheat the meatballs in a pan, covered, at 350 degrees F until warmed through, about 25 minutes.

- Preheat oven to 375 degrees F.
- In a large bowl, combine the beef, pork, veal, egg, onion, parsley, garlic, oregano, salt, and pepper and mix until well combined. Scoop the mixture into mini muffin tins. Bake until browned, about 15 to 20 minutes. Serve on split biscuits with sauce and cheese.
- Preheat oven to 400 degrees F.
- In a large bowl, combine flour, 1/2 cup Parmesan, sugar, baking powder, salt, and pepper. Whisk until well blended. Add butter and combine with fingertips until a coarse meal forms. Mix in parsley. Gradually add milk, tossing with a fork until moist clumps form. Add extra milk if mixture is dry. Put dough on a floured work surface, folding 8 to 10 times until it becomes firm. Let rest for 10 minutes under a damp towel. Roll out on lightly floured work surface. Using a 2-inch-diameter biscuit ring, cut out biscuits and put on a parchment lined baking sheet. Sprinkle with remaining 1/2 cup cheese and bake until biscuits are puffed and golden, about 15 minutes.
- In a medium pan over high heat, saute onion and garlic in olive oil until softened, about 3 minutes. Add tomatoes and allow to simmer until slightly reduced and thickened, about 25 minutes. Stir in fresh basil just before serving.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the ground beef, bread crumbs, onion, salt and pepper, garlic powder, and half of the mozzarella cheese. Form the mixture into a log, and place it into an 8x8 inch baking dish.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
- Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. ITALIAN MEATBALL SOUP

- To make the meatballs, add the ground beef, grated Parmesan, 3 tablespoons of the parsley, the lemon juice, ground oregano, garlic, egg, 1/4 teaspoon salt and 1/2 teaspoon ground pepper to a bowl and mix together well. Roll the mixture into 1-inch balls.
- In a large pot, heat the olive oil over medium-high heat. Brown the meatballs in batches, turning to brown all sides, 3 to 4 minutes per batch. No need to cook them all the way as they'll go back into the soup later. Remove them with a slotted spoon and set aside.
- Now, grab some beef stock and pour it into a pot. Add some salt and pepper. Stir in the tomato paste--it adds so much yummy richness. Make a bouquet garni by adding the peppercorns, bay leaves and remaining 1/4 cup parsley to a piece of cheesecloth and tying it into a bundle using kitchen twine; drop it right into the soup. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
- Remove the bouquet garni, which now resembles a jellyfish with jaundice. Go ahead and discard it; it's lived a full life. Add the diced potatoes, carrots, celery and onions and the sliced cabbage. Finally, in go the browned meatballs. Let the soup simmer long enough for the vegetables to get slightly tender and the meatballs to cook all the way through, another 20 minutes or so.
- You can sprinkle the soup with some freshly grated Parmesan if you'd like one last dose of decadence. Serve with crusty bread.
SAN FRANCISCO CRAB "MEATBALL" CHOWDER
Steps:
- 1. To make the meatballs, place the crabmeat in a mixing bowl and shred with a fork. Add the eggs, milk, dry mustard, pepper, and cracker crumbs. Mix well. Season with salt and hot sauce to taste. Moisten your hands and roll the mixture into balls that are about 3/4- to 1-inch in diameter (about 1/2 ounce each); keep your hands slightly wet so the balls are very smooth. Place on a cookie sheet. You should have about 36 balls. Cover and refrigerate while you prepare the chowder.
- 2. To cook the crabs, fill a 6- to 8-quart pot with 1/2-inch ocean water or tap water with enough salt added to make it very salty. Bring to a boil, place the crab(s) top shell (carapace) down in the pot, cover, and steam for about 12 minutes for smaller crabs, about 20 minutes for a Dungeness crab. Remove and allow to cool at room temperature.
- 3. When cool enough to handle, remove the crab legs, break into sections, and neatly crack the large pieces. Pick the meat from the small pieces and reserve. Remove the apron (tail flap) from the bottom of each crab and discard. Remove the top shell, scoop the green stuff (tomalley) out of it, and reserve; discard the shell. Remove the gills from the body and discard. Cut the body into quarters and trim away any extraneous shell or cartilage. Refrigerate all the crabmeat, crab pieces, and tomalley until ready to use.
- 4. Heat a 4- to 6-quart heavy pot over low heat and add the bacon. Once it has rendered a few tablespoons of fat, increase the heat to medium and cook until the bacon is a crisp golden brown. Pour off all but 1 tablespoon of the fat, leaving the bacon in the pot.
- 5. Add the garlic and cook for 30 seconds. Add the butter, onion, bell pepper, bay leaves, and the Old Bay Seasoning and cook, stirring occasionally with a wooden spoon, for about 10 minutes, until the onion and pepper are softened but not browned.
- 6. Add the potatoes and crab stock, turn up the heat, and bring to a boil. Cover the pot and cook the potatoes vigorously for about 10 minutes, until they are soft on the outside but still firm in the center. If the broth hasn't thickened lightly, smash a few potatoes against the side of the pot and cook a minute or two longer to release their starch.
- 7. Lower the heat to medium, add the tomatoes, and bring back to a simmer. Season with salt and pepper. Remove the pot from the heat and stir in the cracked crab legs, picked leg meat, tomalley, and body sections. If you are not serving the chowder within the hour, let it cool a bit, then refrigerate; cover the chowder after it has chilled completely. Otherwise, let it sit at room temperature for up to an hour, allowing the flavors to meld.
- 8. When ready to serve, reheat the chowder over low heat. While it is reheating, place an 8- or 9-inch skillet or sauté pan over medium-high heat, add about 1/2 inch vegetable oil, and heat to about 350°F. Carefully but quickly add 8 to 10 meatballs to the hot oil and pan-fry, turning them as needed, until they are a rich brown color on all sides, so they resemble real meatballs. Using a slotted spoon, remove the meatballs, letting the excess oil drain back into the pan, then place on paper towels to drain. Repeat with the remaining meatballs.
- 9. Ladle the chowder into shallow bowls or large soup plates, making sure that the crab, onions, peppers, tomatoes, and potatoes are evenly divided. Place 4 meatballs in each bowl and sprinkle generously with the chopped parsley. Serve the remaining meatballs on a plate or platter; your guests can add more, if desired.
- In addition to the crab meatballs, the chowder contains two whole crabs. Steaming and cracking the crabs is a bit of work, but they add great flavor. If you use the full amount of crab stock called for in the recipe, you can omit the crabs and still have a great chowder, but do not omit them if you make the chowder with fish or chicken stock. Without any crab flavor in the chowder, the meatballs dont connect. Even with crab stock, I recommend the cracked crabs; they add character and rustic charm.
- For equipment, you will need a 6- to 8-quart pot with a tight-fitting lid (for steaming the crabs), a 4- to 6-quart heavy pot with a lid (for making the chowder), a wooden spoon, and an 8- to 9-inch skillet or sauté pan, a slotted spoon, and a ladle.

- In a large bowl, combine the ground beef, eggs, bread crumbs, ¼ cup (10 g) parsley, 3 cloves garlic, salt, and pepper.
- Shape the ground beef mixture into golf ball-sized balls.
- Heat a cast-iron pan or skillet with oil over medium-high heat.
- Cook the meatballs until browned on all sides. Transfer meatballs to a plate then remove pan from heat.
- Preheat oven to 350°F (180°C).
- Place the soft rolls in a baking sheet.
- Cut the top of the rolls with a knife and press the inside down to create a boat.
- Mix together the melted butter, 3 cloves garlic, and 2 tablespoons of parsley.
- Brush the rolls with the garlic butter.
- Bake for 5 minutes, or until toasted.
- Place two slices of mozzarella in the rolls. Place a spoonful of marinara on top of the cheese.
- Place three meatballs in the boat and top with more marinara.
- Bake for 25 minutes, or until cheese is melted.
- Top with Parmesan.
