MEATLOAF CUPCAKE WITH MASHED POTATO ICING AND CHERRY TOMATO JAM
Steps:
- For the meatloaf: Combine the turkey, pork, onions, tomato paste, flour, garlic, dill, turmeric, cumin, smoked paprika, cinnamon and eggs in a large bowl. Let rest, refrigerated, for 10 to 20 minutes.
- Preheat the oven to 375 degrees F.
- Form the meatloaf mixture into 12 balls and put 1 ball in each cup of a 12-cup cupcake or muffin tin. Bake until the internal temperature reaches 155 degrees F, 25 to 30 minutes.
- For the mashed potatoes: Put the potatoes in a pot and cover with water. Bring to a boil, reduce the heat to a simmer and cook until the potatoes are fork-tender. Drain the potatoes, put back in the pot and add the cream, butter, truffle oil and salt and pepper to taste. Mash until smooth; do not over-work as the potatoes will become gummy. If the potatoes are too wet, cook over low heat until a smooth consistency is achieved.
- For the cherry tomato jam: Sweat the onions, ginger and rosemary with the olive oil in a small saucepan over medium heat. Add the sherry vinegar, tomato paste, brown sugar and cherry tomatoes and simmer until the liquid is reduced by one-third, 7 to 8 minutes
- To serve, put each meatloaf cupcake on a plate, ice with some mashed potato icing and top off with a dollop of the cherry tomato jam.

Steps:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
- Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
- Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
- Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
- While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.
- After 45 minutes, take the meat loaves out and spread the sauce over the tops.
- Placed the sauced loaves back in the oven and bake for another 15 minutes or until cooked through.
- Let the meat loaves cool for 5 - 10 minutes before cutting them.
- Enjoy!
- P.S. To cook a frozen meatloaf, take the frozen meat loaf out the day before you want to cook it and let it thaw in the refrigerator. Cook as stated above.
- P.S.S. This meatloaf pairs wonderfully with my super yummy corn casserole!

MEAT-LOVER'S CUPCAKES
This is a quick and easy recipe that is good for any kind of get together. Whether it's a small family get together, or a game-day blow out, these are sure to delight food lovers of all ages. For the sauce I like to use stone-ground Dijon mustard. Feel free to experiment with different types of mustard, each one changes the flavor of the sauce. Regular yellow mustard makes the sauce slightly sweeter.
