MEATY SPAGHETTI SAUCE
Tired of the same old boring spaghetti sauce recipes? I invented this one to satisfy my craving for a meaty, flavorful sauce. Serve with your favorite pasta, topped with grated Parmesan cheese. Freeze the leftovers for a quick dinner another night!

Steps:
- In a large stockpot cook the ground beef, sausage, pepperoni, green bell pepper, red bell pepper, garlic, onion, carrots and celery. Cook until beef is no longer pink. Drain into a large colander to drain grease.
- To the large saucepot, add the mushrooms, tomato sauce, tomatoes, tomato paste, bouillon cubes, bay leaves, thyme, oregano, basil, crushed red pepper, black pepper, sugar, and beef broth and stir well. Pour the meat mixture into the pot. Bring to a boil, reduce heat and cover. Simmer for 2 hours.

MUSHROOM-BEEF SPAGHETTI SAUCE
A recipe from the Taste of Home cookbook. It's very yummy. It can be made in the crockpot but I made it on the stove-top. You can add some bell pepper and other veggies to make it chunkier.

- In a large nonstick skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink; drain.
- Transfer to a 3-qt. slow cooker. Stir in the tomatoes, tomato paste and sauce, broth, parsley, brown sugar, basil, oregano, salt and pepper. Cover and cook on low for 6-8 hours.
- Stovetop mushroom-beef spaghetti sauce : Prepare as directed in step 1. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally.

- In 2qt.
- heavy saucepan crumble beef, cook over med-high heat chopping to break up large pieces.
- Pour off excess fat (but leave a little).
- Add onions and green pepper cook til veggies are whimpy, add mushrooms.
- Add remaining ingredients stir well, simmer 20 minutes stirring occasionally.
- Serve over cooked spaghetti.

This pasta dish gets most of its flavor from the sauteed mushrooms, along with a little garlic and Parmesan cheese. For a more complex flavor, use a variety of mushrooms.

- Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1 cup cooking water; drain pasta, and return to pot.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and garlic; season with salt and pepper. Cover skillet (it will be full); cook, tossing occasionally, until mushrooms have softened and released their liquid, 7 to 10 minutes. Uncover skillet, and reduce heat to medium; cook, tossing occasionally, until mushrooms are tender and browned, 10 to 12 minutes.
- Add mushroom mixture and Parmesan cheese to pasta; toss to combine. Add as much reserved pasta water as necessary to create a light sauce. Serve immediately, topped with more Parmesan cheese.

- Cook spaghetti as directed on package, omitting salt.
- Meanwhile, brown meat with onions and garlic in large skillet on medium heat; drain. Stir in pasta sauce; cover. Simmer on low heat 10 min., stirring occasionally.
- Drain spaghetti. Serve topped with sauce and cheese.

PASTA WITH MEATY BONES
Steps:
- Put the olive oil in a saucepan over medium heat. After a minute, add the chiles if you like and cook for about 30 seconds. Add the veal shank and raise the heat to medium-high; cook, turning as necessary, until the meat is nicely browned, 10 minutes or more. When the meat is just about done, add the garlic and salt and pepper to taste.
- When the garlic has softened a bit, crush the tomatoes and add them along with their juice. Turn the heat to medium-low to maintain a steady simmer. If you are using a broad pot, cover it partially. Cook, stirring occasionally, until the meat is tender and just about falling off the bone, at least 1 hour.
- Bring a large pot of water to a boil and salt it. Cook the pasta until it is tender but firm. Remove the veal shank, scoop out any marrow, chop the meat coarsely, and return the meat to the sauce (discard the bone). Remove and discard the chiles.
- Drain and sauce the pasta; sprinkle it with the herb, toss, and serve.
- Variations
- Pasta with Ribs: This is one of the best ways to use a small amount of meat in a highly satisfying way. Substitute 6 to 8 meaty spareribs for the veal shank (you can even use a couple more). The cooking time may be a little shorter. Serve the pasta topped with sauce along with a couple of ribs on the side.
- Carrots make a nice addition to this sauce; add about a cup, cut into chunks, along with the tomatoes. Some chopped onion won't do any harm either.

- Brown hamburger w/onion, drain fat.
- Brown pork, drain fat.
- Transfer both meats into a large saucepan; and add all tomato indgredients, mushrooms, garlic cloves and garlic salt, stir.
- Top with italian seasoning and simmer, covered for 1 hour.
- Taste and simmer for 4-5 hours.
- Serve over pasta.
