Animal Cracker Crusted Chicken with Fuji Caramelized Apples image

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the cleaned and rinsed chicken breasts into a mixing bowl. Cut an incision into the breasts that's large enough to fit the stuffing. After you make the incision, sprinkle the breasts with the garlic, salt, pepper, and fresh thyme breast. Cover and refrigerate while you prep the bread crumbs and saute the apples.
  • In a mixing bowl combine the animal crackers and bread crumbs.
  • Heat saute pan over medium-high heat. Add the olive oil and the apples. Cook for 10 to 15 minutes depending on how soft you would like them.
  • Whisk the egg in a small bowl. Lay out a sheet of aluminum foil. Put a seasoned chicken breast on the foil and stuff 1/4 of the apples into the incision. Dredge the chicken in the whisked egg, and then roll it in the bread crumb mixture. Put the breaded chicken breast back on the sheet of foil and roll it up so the foil is covering the breast completely. Repeat these steps for the remaining breasts. Lastly, place the wrapped chicken breasts in a baking pan and bake for 1 hour. Remove the pan from the oven, unwrap the chicken and serve on individual plates.

4 (2-ounce) boneless skinless chicken breasts
6 cloves freshly minced garlic (not jarred)

Veal Medallions with Caramelized Apples, Beeren Auslese Riesling, and Pine Nuts image

Steps:

  • Preheat the oven to 350 degrees F.
  • Toast the pine nuts in the oven in a pan. When browned, remove and set aside.
  • Season both sides of the veal medallions with salt and pepper, and then dust each side very lightly with flour. Pat off any excess.
  • Heat the oil in a heavy saute pan large enough to hold the veal without crowding it. When the oil is hot, brown the medallions approximately 3 minutes per side, or until they are golden brown and just cooked through. Transfer the meat to a heated plate and keep warm. Pour off any excess fat from the pan.
  • Deglaze the pan with the wine, and then reduce to 1/4 of a cup. Add the stock and also add any of the veal juices that have collected on the plate. Reduce the sauce until it thickens slightly. Slowly whisk in 4 tablespoons of the butter, a little at a time. Season the sauce, to taste, with salt and pepper and strain into a small saucepan. Keep warm.
  • In a medium saute pan, heat the remaining 2 tablespoons of butter. Add the sliced apples, and the lemon juice. Saute until tender and golden brown.
  • Mix watercress with citrus vinaigrette. Divide watercress evenly among 4 plates. Place a few slices of apple on top of the salad. Top with 2 veal medallions per plate, and spoon sauce over meat. Sprinkle with the reserved pine nuts.
  • Preheat the oven to 400 degrees F.
  • Spread the bones and onion slices in a roasting pan and set in the oven. Turn the bones to brown all sides until they are a deep golden brown, about 30 minutes. Do not allow them to burn, since that will give the stock a bitter taste.
  • Transfer the bones and onion to a stockpot, and place the roasting pan on the stove. Over medium high heat, deglaze the pan with 2 cups of water, scraping up all the bits that stick to the bottom of the pan. Pour into the stockpot and add 3 quarts of water. Bring to a boil, lower heat, and simmer for 3 hours.
  • Strain into a clean stockpot and boil for 20 to 30 minutes, until the stock is reduced to 2 cups. At this point, the stock is more concentrated and more flavorful. Strain into a clean bowl and cool.
  • Since brown stock is primarily a base for sauces and only a small amount is used, pour the cooled stock into an ice-cube tray. When completely solid, release the cubes, enclose in a plastic bag, and return to the freezer. When needed, one or two cubes can be defrosted and used.
  • In a medium saucepan, bring orange juice to a boil. Lower to a simmer and reduce until only 1/3 cup remains. Cool to room temperature.
  • In a medium bowl, combine orange juice, shallot, thyme, vinegar and orange zest.
  • Slowly whisk in olive oil until thick and emulsified. Season with salt and pepper. Refrigerate until needed.

3 tablespoons Shallot-Citrus Vinaigrette, recipe follows
5 to 6 pounds chicken bones, including necks and feet, coarsely chopped
1 medium onion, peeled, trimmed, and thinly sliced
2 cups water, plus 3 quarts
3/4 cup fresh orange juice
1 teaspoon minced shallot
1/2 teaspoon minced fresh thyme leaves
1 tablespoon balsamic vinegar
1/2 teaspoon orange zest
1/3 cup extra virgin olive oil
Salt
Freshly ground black pepper

PAN-FRIED GIANT LATKE WITH CARAMELIZED APPLES AND SOUR CREAM

Latkes are a labor of love and eagerly awaited by all during the holidays, but they are often incredibly time consuming as they are fried individually. With this large skillet latke you get all the flavor and crispiness in a fraction of the time.

Pan-Fried Giant Latke with Caramelized Apples and Sour Cream image

Steps:

  • Combine the apples, sugar and a pinch of salt in a medium bowl and toss to coat.
  • Melt the butter in a medium skillet over medium-high heat until just starting to brown around the edges. Add the apples and cook, stirring often, until they are a deep, dark golden color, about 8 minutes. Transfer to a plate and set aside.
  • Preheat a 10-inch nonstick skillet over medium heat. Set a wire rack inside a rimmed baking sheet.
  • Peel the potatoes and shred them in a food processor fitted with the shredding blade; transfer the shredded potatoes to a large colander as the food processor fills up. Press them firmly to remove any excess moisture, pat dry with paper towels and transfer to a large bowl.
  • Grate the onion in the food processor and stir into the potatoes along with the matzo meal, egg, baking powder and 2 teaspoons salt. Immediately move to cooking the potato mixture or it will purge too much water and not be crispy.
  • Add 1/4 cup of the oil to your preheated skillet and as soon as it shimmers add the potato mixture in handfuls, creating an even layer and leaving any excess moisture in the bowl. Cook until golden and crispy on the bottom, about 6 minutes. Slide the latke on to the wire rack.
  • Return the skillet to the heat and add the remaining 1/4 cup oil. Once it is shimmering cover the latke with a round platter or large pot lid and in one swift motion invert the rack with the latke cooked-side up onto your platter or lid. Carefully slide the latke back into the skillet and cook until golden and cooked through, about 5 minutes. Slide back on to the wire rack and let drain for a minute.
  • Transfer the latke to a serving platter, top with the sour cream, caramelized apples and sprinkle with the herbs.

Beef Medallions and Mushrooms in Red Wine Sauce image

Steps:

  • Start by cutting the tenderloin into 6 equal pieces, then flatten each piece using a mallet or heavy weight until each piece is 1/4 inch thick.
  • Season with the salt and pepper.
  • In a medium skillet, melt a tablespooon of butter over med-high heat.
  • Add the beef, in batches if necessary, and saute until outside is brown but inside is still very pink, about 2 minutes on each side.
  • After browning remove each tenderloin from pan and keep warm.
  • Add remaining butter to skillet, and when melted, add mushrooms and shallots.
  • Saute until tender, about 10 minutes. Sprinkle the sugar over the mixture, and cook until deep brown, about 4 minutes longer.
  • Add vinegar, garlic, herbs, and flour and stir one minute, until liquid is absorbed.
  • Add broth and wine, and bring to a boil.
  • Cook until liquid is thickened and reduced to about 1/2 cup.
  • Return beef to the pan, and heat through, about 1 minute.
  • Arrange beef on plate and spoon sauce and mushrooms over.

  • Preheat broiler. In a small bowl, mix cornstarch, broth and apple juice. In a nonstick skillet, heat butter over medium-high heat.
