Mediterranean Fettuccine image

Steps:

  • In a small saucepan, bring broth to a boil. Remove from the heat; add tomatoes. Let stand for 5-7 minutes. Cut tomatoes into thin slices and return to broth; set aside. , Cook fettuccine according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, saute peppers and onions in oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Reduce heat. Stir in the olives, basil, capers, oregano and reserved tomato mixture; heat through., Drain fettuccine; place in a large serving bowl. Add the cheese and pepper mixture; toss to coat.

1/2 cup vegetable broth
8 sun-dried tomatoes (not packed in oil), halved
6 ounces uncooked fettuccine
1 medium sweet yellow pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
1 cup chopped green onions
1 tablespoon olive oil
2 garlic cloves, minced
10 Greek olives, pitted and coarsely chopped
1/4 cup minced fresh basil
1 tablespoon capers, drained
1 teaspoon dried oregano
1 package (4 ounces) crumbled feta cheese

MEDITERRANEAN PASTA WITH SAUSAGE

A wonderful, easy alternative to lasagna! I can't recall which magazine I discovered this recipe in but the picture is what appealed to me. My kids wrinkled their noses at the idea of spinach but quickly decided it was great anyway! It's very easy to prepare & tastes just as good as a leftover.

Steps:

  • Cook: sausage in a large, nonstick skillet over med-high heat for 5 - 7 minutes or until crumbled & no longer pink; drain.
  • Stir: in sauce, olives & spinach, heat through. In a large bowl, combine meat sauce with hot pasta. Toss until well coated. Coat a 13X9X2" baking dish with cooking spray. Pour half of the pasta mixture into dish; top with half of cheese. Repeat. Cover with foil.
  • Bake: in a preheated 350° oven for 20 to 25 minutes or until cheese is melted.

Mediterranean Fettuccine With Sausage image

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat. Add sausage and onion and cook, stirring occasionally, until sausage is browned and onion is tender, about 6-7 minutes. Add garlic and cook for about 1 minute. Stir in wine and basil; cook, stirring up any browned bits from the bottom of skillet, about 1 minute or so.
  • Add pasta sauce, olives, and capers; bring to a boil. Reduce heat to medium-low; simmer, covered, until sausage is thoroughly cooked, about 15-20 minutes.
  • Meanwhile, in a large pt of salted boiling water, cook the fettuccine according to package directions; drain. Add to sauce mixture and toss to combine. Transfer to a serving bowl; sprinkle with Parmesan cheese and parsley.

Spicy Sausage Fettuccine image

Steps:

  • In a large skillet, heat oil over medium heat; brown sausages on all sides. Transfer to a 3-qt. slow cooker, reserving drippings in pan., In same skillet, saute mushrooms and onion in drippings over medium heat until tender, 4-5 minutes. Stir in garlic; cook and stir 1 minute. Stir in tomatoes, stock and wine; pour over sausages. Cook, covered, on low 6-8 hours (a thermometer inserted in sausages should read at least 160°)., To serve, cook fettuccine according to package directions; drain. Remove sausages from slow cooker; cut into thick slices., Skim fat from mushroom mixture. Add fettuccine and sausage; toss to combine. Serve in bowls. If desired, top with cheese.

  • While the water boils and pasta cooks, prep your vegetables and remaining ingredients: mince the garlic; halve the cherry tomatoes; drain and roughly chop the artichokes; drain and slice the olives in half. Once the vegetables start cooking, the recipe goes quickly, so you want to be ready.
  • Heat the olive oil in a large skillet over medium high heat. Add the tomatoes, garlic, the remaining 1 teaspoon salt, pepper, and crushed red pepper flakes. Cook, stirring frequently, until the garlic is fragrant and the tomatoes begin to break down and release some juices into the oil, 1 to 2 minutes.
  • Add the pasta to the skillet and toss to coat. Add the artichokes and olives. Drizzle the lemon juice over the pasta. Continue tossing and cook for 1 to 2 minutes, until warmed through. If the pasta seems too dry, add a splash of the reserved pasta water to loosen it. Taste and adjust the salt and pepper as desired. Remove from heat and sprinkle with Parmesan and parsley.
