MEXICAN CHICKEN ADOBO

Made this recipe years ago and have modified it somewhat from the original. Once you make it, it will be your favorite. Best when the chicken is marinated 2 days but can be done when marinated for 24 hours. For the chicken breast, I normally buy 1/2 a breast per person. If the breast are large, I cut each breast in half.

  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • In a large pot, mix soy sauce, water, vinegar, honey, garlic, bay leaves, and pepper. Bring the mixture to a boil, and place the chicken into the pot. Reduce heat, cover, and cook 35 to 40 minutes.

Steps:

  • For the chicken: Preheat 2 cast-iron grill pans over medium heat.
  • Whisk together the ancho chile powder, New Mexican chile powder, oregano, cumin, garlic powder, onion powder, orange juice, lime juice and season with salt and pepper in a medium bowl. Add the canola oil and whisk. Put the chicken in the marinade, turning the chicken to coat both sides.
  • Grill the chicken until golden brown and slightly charred on one side, about 4 minutes. Flip and cook the other side until the chicken is cooked through, about 4 more minutes; the juices should run clear and the meat thermometer should read 165 degrees F.
  • Meanwhile, for the salad: Put the avocado, onions, cilantro, salt, pepper, lime juice and olive oil in a medium bowl. Fold the ingredients with a rubber spatula, gently breaking up the avocado in the process.
  • To serve: Grill the tortillas on both sides until lightly marked and warmed through, about 10 seconds per side. Then fold in half and place on the side of a serving dish.
  • Place the chicken in the center of the serving dish and top with a scoop of the salad. Drizzle with olive oil and lime juice and garnish with a sprig of cilantro.

  • Slit guajillo chiles lengthwise, then stem and seed. Heat a dry cast-iron skillet (not nonstick) over medium heat until hot, then toast chiles in batches (with guajillos opened flat), turning and pressing with tongs, until more pliable and slightly changed in color, about 30 seconds per batch. Transfer to a bowl and soak in boiling-hot water until softened, about 15 minutes.
  • Drain chiles, then purée in a blender with 1 tablespoon sea salt and remaining ingredients except chicken and remaining sea salt until adobo is very smooth, about 1 minute.
  • Sprinkle chicken with remaining 3/4 teaspoon sea salt. Place 1 chicken leg in center of a sheet of parchment paper (about 20 by 15 inches) and cover with 1/3 cup adobo. Gather parchment up around chicken and tie tightly with kitchen string. Repeat with remaining chicken and adobo.
  • Arrange packages in 2 steamer racks and/or pasta-pot inserts. Classic Filipino Chicken Adobo image

Steps:

  • Combine all ingredients in a deep glass or stainless steel sauce pan.
  • Bring to a boil over medium heat, then reduce heat to medium low.
  • Cover and simmer for about 30 minutes or until the meat is very tender.
  • Gently turn the meat occasionally during the course of cooking.
  • Remove the meat from the sauce and pan-fry in a little oil until browned on all sides.
  • Transfer to a serving platter or bowl and cover with sauce. Serve with warm steamed rice.
  • While the recipe says to saute the meat after it's cooked, I usually brown the meat before adding the remainder of the incredients. I have no idea what difference this makes, if any.
