- Combine condensed milk, evaporated milk, and lime juice in a bowl; beat with an electric mixer until well blended.
- Arrange a layer of Maria cookies in the bottom of a small baking dish. Cover with a layer of milk mixture. Repeat layers of cookies and milk mixture, ending with milk mixture. Cover baking dish with plastic wrap. Refrigerate until firm, 5 hours to overnight.
- Cut into squares. Garnish with lime zest.

I got this recipe from my friend. Her hubbie Armando makes this. Story is that his mom use to make it for him when he was little. They are from Mexico city.

- 1. Get your pretty pan ready. Mix milk and lime juice. Start by layering the cookies and layer with milk mix, add another layer. Milk mix should be at the top. Sprinkle lime zest.
- 2. Refrigerate so that the milk mix will set.
- 3. Cut up and enjoy!!!

- Combine evaporated milk, condensed milk, and lemon juice in a bowl; whisk until mixture is thick and smooth.
- Line a glass bowl or trifle dish with Maria cookies and cover them with a generous layer of the milk mixture. Add another layer of biscuits and milk. Continue the layering, ending with a layer of the milk mixture.

MEXICAN LIME PIE

- Set aside 1 Tbsp of graham cracker crumbs for topping. Add the rest of the crumbs to a medium bowl, pour in the melted butter and stir with a fork until well mixed. Press the crust into bottom and sides of 9 inch pie dish. Chill while preparing the filling. Pour the condensed mild and evaporated milk into a blender and mix on low for 2 minutes, until tiny air bubbles can be seen along the edges. Add the lime zest and blend briefly. The next part is where the magic happens. With the blender running on medium-low, pour in the lime juice through the hole in the lid in a slow, thin stream. The acidity of the lime juice will cause the mixture to thicken about halfway through. Mix just until incorporated, increasing the blender speed if necessary. Do not over blend or it will thin out. Pour the lime filling into the crust. Sprinkle the remaining cookie crumbs over the top. Freeze for 3-4 hours before serving. The flavor and texture of this pie are best before filling reaches popsicle consistency. If frozen solid, let sit out for 20 minutes to soften before serving.
KEY LIME PIE

- Heat the oven to 160C/fan 140C/gas 3.
- Whizz 300g Hob Nobs to crumbs in a food processor (or put in a strong plastic bag and bash with a rolling pin).
- Mix with 150g melted butter and press into the base and up the sides of a 22cm loose-based tart tin. Bake in the oven for 10 minutes. Remove and cool.
- Put 3 medium egg yolks in a large bowl and whisk for a minute with electric beaters.
- Add a can of condensed milk and whisk for 3 minutes, then add the finely grated zest and juice of 4 limes and whisk again for 3 minutes.
- Pour the filling into the cooled base then put back in the oven for 15 minutes. Cool then chill for at least 3 hours or overnight if you like. When you are ready to serve, carefully remove the pie from the tin and put on a serving plate.
- To decorate, softly whip together 300ml double cream and 1 tbsp icing sugar.
- Dollop or pipe the cream onto the top of the pie and finish with extra lime zest.

I looked through every lime pie recipe listed here, and can't find one similar, so decided to post this. My mom won first place in the cream pie category at a cook off in their retirement community in Texas. I think the cream cheese gives it just that bit of difference.

- Lime curd: Cook over medium heat: the sugar, butter, eggs, & lime juice, whisking until a mark holds (about 12 - 15 minutes). Stir in the zest & cool. Can be made up to one week ahead, kept in covered container.
- Crust: Mix crumbs, butter & sugar well. Pat into a 9 inch pie pan. Refrigerate until firm.
- Pie filling: Beat together: cream cheese, lime curd, lime zest, & lime juice. Whip the cream and powdered sugar. Fold 1/4 of the whipped cream into the cream cheese mixture & then fold in the rest. Put into graham crust & chill.
- Garnish with whipped cream & lime slices.

- Juice the limes then strain them through a fine sieve and pour into a blender. Pour in the evaporated and condensed milks the add the vanilla extract. Blend for a couple of minutes or just until you achieve a smooth mixture. Don’t over do it so you don’t end up with lots of air bubbles.
- In a baking dish pour in a little bit of the sauce then arrange a single layer of Maria cookies. Next pour in a bit of the milk mixture over the cookies to coat them and use a spoon or spatula to help smooth, then add another layer of cookies and so on repeating until you have used up all of the milk mixtures. If you’d like you can break up some cookies to use to fill in the small gaps of the others (see video).
- I would suggest that you try no to do more than 4 or 5 layers of cookies so that they don’t overpower the taste of the lime-milk mixture. They will soak up the liquid so you also don’t want too many of them because it’ll just end up being like a big soggy cookie — no one wants that!
- The last or top layer should end with the milk mixture. Make sure you try to smooth it over as much as possible. I also like to give the dish a gentle tap on the table to help with any air bubbles. Coat the top layer with lime zest, if desired but will add an additional nice strong lime taste. Cover the baking dish with plastic wrap or its own lid and refrigerate for at least 2 hours before serving. I like to leave mine in the fridge overnight to make sure the dessert has solidified enough and also so the cookies have soaked up the milk mixture.

- In a stand mixer fitted with the paddle attachment, beat the butter on medium speed until creamy, about 2 to 3 minutes. Add the sugar, salt, and egg yolks, and continue beating until well combined. Reduce speed to low, add a 1/2 cup of all-purpose flour at a time. Lastly add the milk and beat just until the dough is fully combined and comes together. Roll into a ball. Wrap in plastic wrap and let it sit in the refrigerator for a half hour, or until it is firm enough to roll.
- In a stand mixer fitted with the whisk attachment, beat the eggs on medium speed, until foamy, for a couple of minutes. Pour in the sweetened condensed milk, and continue beating for a minute or two. Pour the heavy cream, along with the lime zest and lime juice and continue beating for a couple minutes more, until fully combined and thickened.
- In a stand mixer fitted with the whisk attachment, beat the egg whites over medium speed until soft peaks start to form, or you start seeing soft shapes in the egg whites as the whisk moves along. Pour in the confectioners’ sugar, 1/4 cup at a time. Continue beating until you achieve meringue consistency, the mixture is shiny, thick and you see deeply marked shapes as the whisk moves along. You can also tell if it’s ready, if you stop the mixer and raise the whisk, the mixture should hold stiff peaks. With a rubber spatula, spoon the meringue on top of the pie, spread along very gently, making waves or peaks as you cover the entire pie. Place on the baking sheet and into the oven for another 10 minutes or until the meringue has set and its top is lightly browned.
