MEXICAN-STYLE SHRIMP COCKTAIL
Here's a tasty twist on a classic starter. This dish combines deliciously diverse Mexican flavors, from fresh cilantro to authentic hot sauce. The textural contrast of crunchy jicama and creamy avocado makes this a uniquely tasty cocktail sauce for any poached seafood.

Steps:
- Bring 1 quart (1L) of salted water to a boil. Add the shrimp and let the water return to a simmer and poach for an additional minute or two. Scoop the shrimp out and place onto a rimmed baking sheet and chill 30 minutes. The shrimp can be made a day in advance and chilled until ready to serve.
- For the sauce, stir together the ketchup, lime juice, the Mexican hot sauce, olive oil and cilantro in a large bowl. This step can be completed a day in advance, stored in the refrigerator in an airtight container.
- In a small strainer, rinse the onion under cold water, then shake off the excess liquid, and add to the sauce. Peel, dice and add the jicama; dice and add the cucumber. Stir in the chilled shrimp and the avocado right before serving.
- Garnish with lime and serve with tostadas, chips, or saltine crackers.
MEXICAN LIME PRAWN COCKTAIL
Lightly steamed prawns are marinated in lime juice and served with tortilla chips. From PCC. Cook time is refrigeration time.

- 1. Bring 1 quart salted water to a boil; add 2 tablespoons lime juice. Add prawns and bring back to a boil. Turn off the heat, pour off liquid and cover with a lid. Let prawns steam for 10 minutes off the heat. Spread out on a plate to cool completely.
- 2. Toss prawns with remaining 1/2 cup lime juice, cover and refrigerate for 1 hour.
- 3. Remove prawns from lime juice, reserving a few tablespoons. Combine prawns, onions, cilantro, jalapeño, garlic, cumin, olive oil, salt, pepper and reserved lime juice in a bowl. Transfer to martini glasses or glass bowls and serve with tomatoes, avocado slices and tortilla chips.
MEXICAN SHRIMP COCKTAIL
I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!

- Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.

- In a large bowl, combine the first 5 ingredients. Stir in soda, Clamato juice, lime juice and ketchup. Add shrimp. Refrigerate, covered, at least 2 hours., Just before serving, add avocados. Serve with a slotted spoon and tortilla chips.

- In a large mixing bowl combine diced tomatoes, diced onion, chopped cilantro, and finely diced jalapeno. Squeeze mixture with the juice of one lime, season with a little salt, and toss together with a spoon. Add the entire jar of cocktail sauce and stir till combined. Place bowl in the refrigerator.
- If using cooked shrimp, skip to next step. If using raw shrimp, rinse with cold water and drain well. Remove tails if necessary. Bring a large pot of water to boil on the stove. Drop in about one tablespoon of salt. Add shrimp and cook for two minutes; no longer. Drain hot water from pot and cover the shrimp with cold water to cool them down and stop them from cooking further. Drain well and transfer the shrimp to a cutting board.
- Cut each shrimp into two or three pieces to desired size. Transfer chopped shrimp to the chilled bowl of tomato/cocktail sauce mixture and stir well to combine. If desired, bowl can be covered with plastic wrap and refrigerated for several hours at this point until ready to assemble shrimp cocktails.
- When ready to serve, remove pits and chop avocados. Squeeze juice from remaining lime over the top of the chopped avocado. To serve in a large bowl, garnish top of the shrimp cocktail with the avocado and allow people to serve themselves. For individual servings in martini glasses, layer a heaping spoonful of the shrimp cocktail mixture in the bottom of each glass. Add a generous layer of avocado. Fill glasses to the top with more shrimp cocktail and garnish the top with some of the avocado.
