BURRITO PIE

This is a lot like a lasagna, only Mexican-style! Serve like a pie and garnish with sour cream, salsa, lettuce and tomato. Make sure you like spicy foods before trying this one. It's hot!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  • Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  • Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.

Steps:

  • Combine the eggs and 1 teaspoon salt in a medium bowl and whisk to combine; set aside. Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat until shimmering. Sprinkle the potatoes with salt and add to the skillet in a single even layer. Cook until golden and crispy on the bottom, about 5 minutes. Flip with a heatproof spatula and drizzle 2 more tablespoons oil around the edge of the skillet, giving the skillet a good shake once all the oil is in. (This allows you to use less oil while still getting a crispy potato cake.) Continue cooking until golden and crispy on the bottom, about 5 minutes.
  • Meanwhile, spread 4 tortillas out on a clean work surface and put 1/2 cup cheese in the middle of each. Using the spatula, break the potato cake into 4 pieces and place on top of the cheese. Wipe the skillet out, return to the heat and add 1 tablespoon oil, then the onion and poblanos. Sprinkle with 1 teaspoon salt and cook, stirring occasionally, until wilted and golden, 8 to 10 minutes. Stir in the spinach and cook until heated through, about 2 minutes. Stir in the eggs and cook, stirring occasionally, until the eggs are just set but still moist, 3 to 4 minutes. Divide the egg mixture evenly among the tortillas and wipe out the skillet. Return the skillet to the heat and reduce it to medium-low.
  • Fold the sides of each tortilla in, then roll each one up into a burrito. Brush the burritos all over with the remaining tablespoon oil and put them in the skillet seam-side down. Cook until golden and crispy, about 4 minutes, then flip and repeat on the opposite side. Serve with sour cream and hot sauce on the side.

We like to get burrito bowls from Chipotle, but aren't thrilled with paying for it several times a week. This isn't anything I'd claim as a "clone", but is "inspired" by Chipotle/QDoba's burrito bowls. It's tasty, easy and filling. Steps:

  • In a saucepan, combine the water, rice and juice from the 2 limes.
  • Bring rice mixture to a boil.
  • Reduce heat and simmer covered until all of the liquid is absorbed.
  • While the rice is cooking, chop the onion and the garlic.
  • In another saucepan, melt the butter.
  • Saute the onions and garlic until the onions are translucent.
  • Add the canned tomatoes, white wine and beans.
  • Simmer until most of the moisture boils off.
  • If including meat, dice up some grilled chicken or pork or steak.
  • To serve start with rice in bowl.
  • Top with bean/tomato mixture.
  • Top with meat if using and cheese, chopped cilantro, salsa, sour cream, etc.
  • Eat with chips.

EASY MEXICAN PORK BURRITOS

Pork butt roast and taco or burrito seasoning are a combination to die for! This recipe originally came from my Aunt Pennie. I've tweaked it to our liking though. My whole family loves these! When we have friends over for dinner, this is the perfect meal to prepare. I usually make about 20-24 burritos from one batch of filling. Serve with lettuce, tomato, green onion, sour cream, salsa, avocado, black olives, and Cheddar cheese, if desired.

Easy Mexican Pork Burritos image

Steps:

  • Bring pork shoulder roast, onion, garlic, and 1 package taco seasoning to a boil in a large pot with enough water to cover. Reduce heat to medium-low and simmer until tender and no longer pink in the center, 2 to 3 hours. Check water level every 45 minutes, adding more as needed. Reserve about 1 cup cooking liquid.
  • Shred pork with a fork, discarding excess fat and bone. Stir in tomatoes, refried beans, green chiles, and remaining package of taco seasoning. If the mixture is too dry, add reserved cooking liquid.
  • Spread pork mixture evenly down the center of each tortilla; sprinkle with Cheddar cheese. Fold bottom and top edges of each tortilla over filling; roll sides up to enclose filling completely.
  • Heat 2 tablespoons vegetable oil a large skillet over medium heat; fry burritos in batches, seam sides down, until tortillas are golden, about 2 minutes per side. Drain fried burritos on a paper towel-lined plate.

Steps:

  • For the salsa: Heat the vegetable oil in a large saucepan over medium heat. Add the peppers and onion and cook until the onion is translucent, 8 to 10 minutes.
  • Meanwhile, blend together the tomatoes and tomato sauce in a large blender until smooth. Once the peppers and onions are cooked, stir the tomato sauce mixture into the saucepan. Bring to a boil then reduce to a simmer and stir in the cumin, oregano and black pepper. Simmer for 10 minutes; taste for seasoning and add salt if needed. Keep warm. Makes about 5 cups.
  • For the queso sauce: Put the cheese and jalapenos in a heat-safe blender. Bring the milk to a boil over medium-high heat in a medium saucepan. Carefully pour the hot milk into the blender and blend until smooth. Return to the saucepan and keep warm over low heat.
  • Makes about 2 cups.
  • For the burrito: Heat the vegetable oil in a medium skillet over medium-high heat. Add the sliced steak and brown on one side. Loosen the meat with a spatula or spoon and brown the meat on the other side. Season with salt and pepper and remove from the skillet.
  • Put the tortilla on a microwave-safe dish and cover it with a damp paper towel. Heat in the microwave until quite hot and pliable, about 20 seconds. Discard the paper towel.
  • Put the refried beans, steak, rice, onion, cilantro, and cheese horizontally across the center of the tortilla, leaving a 2-inch border at both ends. Fold the left and right sides inwards perpendicular to the filling, then roll the burrito from front to back, pulling the filling tightly until the bottom of the burrito is now on top. Top with up to 1 cup of the salsa and about the same amount of queso sauce. Serve with sour cream, guacamole, and shredded lettuce if desired. Remaining salsa and queso sauce can be kept for up to 1 week, refrigerated.

Steps:

  • In a large skillet over medium low heat, warm the oil. Add the onion and sauté for 5 minutes, stirring often. Add garlic and sauté another minute.
  • Increase heat to medium, add ground beef or poultry, chili powder, and cumin. cook the mixture until meat is crumbled and cooked through, stirring often, about 5 minutes. Add the salt, water, black beans, and corn and bring to a boil. Reduce heat and simmer/boil, stirring occasionally, for about 20 minutes, until liquid evaporates. Remove from heat and let cool for 10 minutes.
  • Heat the oven to 350 degrees. Using the rim of a 9 inch spring form pan as a template, trim 3 of the tortillas to the size of the pan.
  • Butter the bottom and sides of the pan. Press the UNTRIMMED tortilla evenly into the pan's bottom. Spread 2 tablespoons of the sour cream over the tortilla, followed by ¼ cup of salsa. Spoon and spread a quarter of the meat mixture over the salsa, and follow with a quarter of grated cheese.
  • Place one trimmed tortilla on top of the cheese layer. Repeat layering until all ingredients and tortillas are used up. Finish the top with cheese.
  • Bake the pie until heated through, about 30 minutes. Allow it to cool for 10 minutes, then remove the rim from the spring form pan.
  • Slice into wedges and serve with "taco" stuff!

MEXICAN BURRITO PIE

This recipe is adapted from La Dolce Vegan cookbook. I really loved this because it was quick, simple, and layered all in ONE dish. I served it with some cumin scented rice and some salsa on the side. The original recipe called for 1 avocado, but I had 2 VERY ripe ones on hand and did not want to waste them. Feel free to use lemon OR lime juice. Pinto beans will also work well here too. I listed the vegan cheese as "optional". I am sometimes "iffy" with vegan cheese (taste, meltability etc.), but every now and again it's ok. I do like "Follow Your Heart" brand Monteray Jack and Mozzarella (available here in supermarkets) Keep in mind these need to be heated to at leat 450 degrees to melt, so for the recipe below, I turned up my oven for the last 10-15 minutes of cook time. This recipe also is WONDERFUL without the vegan cheese, so feel free to skip it

  • Preheat oven to 350 degrees.
  • In a small bowl, mash together the avocado, garlic, scallions, "sour cream" and lime juice until smooth.
  • In another bowl, mash together black beans, salsa, jalapeno, chili powder and cumin.
  • Spray and 8" pie plate with cooking spray and begin the layers.
  • Place a tortilla, half the bean mixture. Follow with another tortilla then half the avocado mixture topped with 1/2 cup cheese (if using).
  • Continue with another tortilla, remaining beans, followed by another tortilla, remaining avocado topped with cheese and the last tortilla.
  • cover pie plate with foil and bake for 25 minutes.
  • Remove foil, top with remaining cheese if using, and bake for another 5-10 minutes.
  • Cut pie into wedges and serve.
