MICHAEL SYMON'S BEER BRATS WITH BACON-ONION CHUTNEY image

Steps:

  • # ingredients 1/2 pound Bacon 2 Yellow Onion chopped 3 cloves Garlic minced 2 sprigs Thyme leaves only Salt and Pepper to taste 1/4 cup Apple Cider Vinegar 2 tablespoon Brown Sugar 1 tablespoon Mustard Seeds 1/4 cup Beer/Water instructions To make the chutney, preheat a skillet to medium-high and fry bacon. Once cooked, remove the bacon, leaving the fat, and add onion. Cook until transparent and then fold the bacon back in, reduce heat to medium-low, and cook an additional 12-15 minutes. Add garlic and thyme, cook an additional 2 minutes, and then add the apple cider vinegar, brown sugar, salt, pepper and mustard seed. Cook three to four minutes, and add the beer or water, then cook an additional 4 minutes. # step 2 ingredients 1 tablespoon Extra Virgin Olive Oil 8 Bratwurst instructions Pre-heat grillpan to medium-high. When ready, add extra virgin olive oil to coat pan and grill the Brats, 3-4 minutes, turning occasionally. # step 3 ingredients 4 bottles Beer instructions Meanwhile, in a stockpot, bring the four beers to a simmer. When the brats are ready, add them to the beer and cook 6-8 more minutes. # step 4 ingredients 8 Hoagies Yellow Mustard to serve instructions When brats and chutney are ready, place a brat in a hoagie roll and top with chutney and yellow mustard. Serve immediately.

Brats, Onions, and Apples image

Steps:

  • Heat olive oil in a skillet over medium heat. Cook bratwurst in hot oil until browned, 2 to 3 minutes per side. Remove bratwurst to a plate, reserving drippings in the skillet.
  • Stir apple and onion slices into the reserved drippings; cook and stir until the onion softens, about 6 minutes. Return bratwurst to the skillet, nestling them into the onion mixture. Pour beer over the sausages; season with salt and pepper.
  • Bring the beer to a simmer, reduce heat to medium-low, and cook until the the bratwurst is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

MICHAEL SYMON'S BACON AND ONION JAM

This is not my recipe, I saw Michael Symon cook this on The Chew. He made a grilled cheese with it but I put it on a sandwich made with grilled pork loin and barbeque sauce then grilled it like a grilled cheese. Very good. I was ask to post this recipe is the reason I am posting a Michael Symon recipe.

Michael Symon's Bacon and Onion Jam image

Steps:

  • 1. Over medium heat cook bacon until crisp. Remove from skillet. Add onions to skillet in bacon fat and cook over low heat 12-15 minutes or until caramelized stirring occasionally. When done pour off excess fat. Add remaining ingredients to onions, except bacon. Simmer until liquid is reduced by 2/3rds and looks like jam. Remove from heat and stir in bacon.

1/2 lb bacon, chopped
2 yellow onions, sliced thin
3 clove garlic, minced, i used garlic in jar
2 sprig(s) thyme, leave, i used dried thyme
1/4 c apple cider vinegar
2 Tbsp brown sugar
1 Tbsp mustard seed, i used dried mustard powder
1/4 c beer or water
1 Tbsp olive oil
salt and pepper to taste
