MICHELADAS WITH TAJIN
Micheladas came from the words 'mi chela helada' which translates into 'my cold beer'. Micheladas originated in Mexico and now there are many different recipes. Dark beer, normally XX Cerveza is the norm in Mexico, but you can use any beer you like. This is a basic recipe with optional add-ons. With or without them, Micheladas are delicious. Garnish with a tamarind candy straw and additional lime wedges.

Steps:
- Rub lime juice around the rim of a glass and dip in chile-lime seasoning. Fill with ice.
- Combine tomato juice cocktail, chamoy, hot sauce, Worcestershire, soy sauce, and cayenne. Mix well and pour over ice. Fill the glass with beer.

TAJIN® MICHELADA
I'm lucky enough to live in an area with a large Hispanic population and what seems like a Mexican restaurant or taqueria on every corner. They each have their own michelada recipe, and this is my version of my favorite. Maggi®Jugo seasoning can be found in the international aisle of your grocery store or Hispanic markets and provides an umami flavor. You may substitute soy sauce if necessary. Add more hot sauce if you prefer!

Steps:
- Pour Tajin® onto a small plate. Run 1 lime wedge around the edge of a pint glass, then invert glass onto the plate to create a salt rim.
- Fill glass about halfway with ice. Squeeze the same lime wedge into the glass. Add Maggi® Jugo, hot sauce, and any remaining Tajin® from the plate and stir with a spoon. Pour in tomato and clam juice cocktail and top with beer. Garnish with remaining lime wedge and serve immediately.

MICHELADA
Steps:
- Combine the salt and chili powder on a small plate. Rub the lime wedge along the rim of a large lager beer glass, and then dip the rim into the chili salt. Fill the glass with the ice. Pour in the lime juice, tomato juice, hot sauce, Worcestershire and beer. Stir briefly to incorporate. Garnish with the lime wedge.
CLASSIC MICHELADA
Steps:
- Place about 1/4 cup salt on a small plate. Rub the rim of a Collins or pint glass (or a 16-ounce Solo cup-no need to get fancy) with one of the lime wedges to moisten it, then dip the rim in the salt to coat.
- Combine the tomato juice, lime juice, hot sauce, Worcestershire sauce, Tajín, and a pinch of salt in a small bowl and mix.
- Fill the prepared glass about three-quarters full with ice cubes and add the tomato juice mixture. Top with beer and garnish with the remaining lime wedge.

- Place coarse salt in a shallow dish; run a lime wedge around rims of 2 cocktail glasses. Dip rims of glasses into salt, shaking off excess. Fill each glass with ice. In a small pitcher, combine hot sauce, Maggi seasoning, Worcestershire sauce and lime juice. Add beer. Pour into glasses over ice. Garnish with lime wedges. Serve immediately.

Steps:
- Combine the lime juice, Worcestershire sauce, hot sauce and a pinch of salt in a tall glass. Fill the glass halfway with ice, then pour in the beer and stir. Serve with a lime wedge.
- Hot:
- This beer cocktail calls for any kind of hot sauce, so choose your favorite. We like Cholula and Valentina.
- Hotter:
- Mix equal parts kosher salt and chipotle chile powder. Moisten the rim of the glass with a lime wedge, then dip in the chile salt. Mix in the michelada as directed.
- Hottest:
- Rim the glass with chile salt (see above). Muddle 1 or 2 thin slices serrano chile pepper with the lime juice in the glass, then mix in the remaining ingredients as directed.
