CHERRY CRISP - FROM SCRATCH!

There are many crisp recipes on the site, but I didn't find one quite like this one. There are no cans of cherry pie filling here. Yes, you too can make a cherry crisp from scratch, using real cherries! You could use this filling for many other things like ice cream topping, or Toast-tites on the campfire! Yummy!

Steps:

  • Preheat oven to 375 degrees. In a large bowl, gently toss first 5 ingredients together. Place in a greased casserole dish or 8 inch square pan.
  • In another bowl, mix the rest of the ingredients, using a pastry blender or fork. The mixture should resemble course crumbs. Spread mixture over pie filling. Bake for 30 minutes or until brown.
  • Serve warm with vanilla ice cream. You can substitute canned cherry pie for the homemade cherry filling if you want to, but why?

3 cups sweet cherries, pitted
3 tablespoons sugar
2 tablespoons cornstarch
1/2 tablespoon fresh lemon juice
1/8 teaspoon almond extract
3/4 cup brown sugar, packed
1/2 cup flour
1/2 cup granola cereal
1/3 cup butter, cold
3/4 teaspoon cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • For fruit mixture: Mix together sugar, cornstarch, and water. Bring to a boil. Add cherries and boil 1 minute over medium heat. Stir in butter, lemon juice and food coloring. Remove from heat and pour into a 10 by 6 inch baking dish or casserole dish.
  • For cobbler topping: Mix together together flour, sugar, baking powder, salt, and cinnamon. Stir in oil. Add milk and mix well. Drop by small teaspoonfuls onto hot cherry mixture. Bake at 400 degrees for 20 minutes. Serve warm with ice cream.
  • Notes: I like to sprinkle a little cinnamon sugar on top of the cobbler topping before baking. You can use 1 (16 ounce) can of canned cherries instead of fresh. Drain them and use drained juice in place of water called for in recipe.

FRUIT:
1/2 cup(s) sugar
1 tablespoon(s) plus 1 teaspoon cornstarch
1 cup(s) water
1 pound(s) cherries, cleaned and pitted
2 tablespoon(s) butter
1 teaspoon(s) lemon juice
3 - drops red food coloring, optional
COBBLER:
1 cup(s) flour
1 tablespoon(s) sugar
2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
1/2 teaspoon(s) cinnamon
1/4 cup(s) oil
1/3 cup(s) milk

FRESH CHERRY COBBLER

This is a delicious cherry cobbler made with fresh cherries instead of canned. It may take a little longer to make because you need to pit the cherries, but it is well worth it when you taste the finished product.
