SOLO MICROWAVE CHICKEN AND RICE

I developed the recipe as a give away item while I was working at a cooking supply store that had many college students as customers. The Anchor Hocking Microwave Popcorn Popper works very well for this solo dish and fits into most microwaves found on college campuses.

Solo Microwave Chicken and Rice image

Steps:

  • Put butter into a Microwave Popcorn Popper or a glass casserole dish, and microwave on high for one minute.
  • Add the uncooked rice, and stir until all the grains are coated in the butter.
  • Add everything else, and microwave on high for 10 minutes.
  • Let sit for an additional 5 minutes or until all the liquid is absorbed.
  • Add salt and pepper to taste.

1 small boneless skinless chicken breast, cut into small pieces
1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1/2 cup uncooked rice (, Not instant)
1 cup water or 1 cup chicken broth
1 tablespoon butter
1 tablespoon lemon juice
1 teaspoon dried basil

BBQ chicken with corn rice image

Steps:

  • Heat oven to 200C/180C fan/gas 6. Slash each piece of chicken 2-3 times. Put the chicken, onion wedges and peppers in a roasting tin or ovenproof pan, then toss with 1 tbsp oil and the barbecue sauce. Roast for 40 mins, turning halfway, until sticky and tender. Add a splash of water if the sauce dries up a little at the edges.
  • Meanwhile, heat 1 tbsp oil in a medium pan, then soften the chopped onion for 5 mins. Stir in the thyme, rice, stock and seasoning. Bring to the boil, cover and simmer for 12 mins. Turn off the heat, tip in the corn, add chilli if using, put the lid back on and let the rice steam for 10 mins more. Fluff up the rice, then serve with the chicken, vegetables and pan juices.

1 red and 1 green pepper , deseeded and thickly sliced
2 tbsp olive oil
200ml bottled barbecue sauce
2 tsp thyme leaves
250g long grain rice , rinsed
600ml chicken stock
340g can sweetcorn , rinsed and drained
½ red chilli , finely chopped (optional)

This is an easy dish to put together the night before and then cook in the microwave the next night for dinner. Green chilies add a distinctive flavor.

Microwave Chicken Rice Casserole image

Steps:

  • In a 2-qt. microwave-safe dish, combine the onion, celery and margarine. Cover and microwave on high for 2-3 minutes or until margarine is melted. Stir in milk.
  • Cover and cook on high for 4-6 minutes or until milk is steaming (do not boil). Stir in rice.
  • Cover and let stand for 2 minutes.
  • Add the chicken, soup, croutons, chilies and 1/2 cup cheese.
  • Cover and microwave on high for 5-7 minutes or until heated through, stirring once.
  • Sprinkle with remaining cheese. Cover and let stand for 5 minutes.

1 medium onion, chopped
1 celery rib, chopped
2 tablespoons margarine
2 cups milk
1 1/4 cups uncooked instant rice
2 cups cooked chicken, diced
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1 cup herb-seasoned stuffing cubes
1 (4 ounce) can chopped green chilies, drained
1 cup shredded cheddar cheese, divided

MAMAW'S CHICKEN AND RICE CASSEROLE

I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

Mamaw's Chicken and Rice Casserole image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
  • Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.
  • Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.

Chicken, Rice & Corn image

Steps:

  • Clean and cut the chicken breast into small cubes.
  • Combine all ingredients into a glass dish large enough to house everything including the cubed chicken breast. (Make sure the chicken is completely submersed in the marinade. Marinate for a minimum of 1/2 hour, more for a fuller flavor).
  • Heat a medium sauce pan, skillet or wok over medium to high heat.
  • Place entire contents of bowl into pan and heat until chicken is cooked through.
  • Serve over a bed of rice and corn. And trust me, use all that marinade, it's the best part.
