MICROWAVE PLUM JAM
Smooth and sweet. Luscious on toast or pancakes. Inspired as a filling for cookies and tarts. Makes wonderful gifts. This recipe makes 2 1/2 cups, try and taste.

Steps:
- Place sugar, lemon juice and plums in a deep 8 cup microwavable container (I use a pyrex measure).
- Microwave, uncovered on High for 2 1/2 minutes, stir. REPEAT twice more.
- Microwave, uncovered, on High 15 - 18 minutes, STIRRING every 4 minutes until it will form a gel.
- Ladle into hot sterilized jars. Wipe rims, remove any air bubbles, add hot lids and rings.
- Process 5 minutes in boiling water bath.
MICROWAVE GINGER PLUM JAM
This quick and easy jam makes only 2 1/2 cups. It makes a wonderful glaze for oven-roasted salmon. 3 cups of plums is about 10-12 plums. This recipe comes from the book Small Batch Preserving by Topp and Howard.

Steps:
- Place plums and sugar in a deep 8-cup microwavable container.
- Stir in lemon juice.
- Microwave, uncovered on High for 7 minutes, stirring twice.
- Add ginger; microwave, uncovered on High for 15 to 18 minutes or until mixture will form a gel, stirring every 4 minutes.
- Ladle into sterilized jars and use the inversion method or water bath for 10 minutes.

VERSATILE MICROWAVE FLAPJACKS
It is easy to add your personal twist to this basic recipe. I usually add bananas, mango pulp, dates or orange zest, or simply spread caramel and melted chocolate on them. Irresistible! Add sunflower seeds, pumpkin seeds, dried blueberries, almonds, peanuts or apricots to the mixture before baking to make nutrient rich energy bars.

- Melt the butter and sugar together in the microwave
- Stir in the honey, sultanas, dried fruit, or nuts of your choice.
- Using a sturdy wooden spoon, stir in the oats. If you're using bananas, smash them lightly and mix thoroughly. The mixture should be soft.
- Tip into a greased microwave-safe baking tray and level it off. Cook on high for about five minutes or until the centre starts to bubble.
- Remove from oven, mark and cut halfway into squares and leave to cool.
- Spread melted chocolate and leave until set.
PEANUT BUTTER MICROWAVE FUDGE
Same creamy, sweet taste, but in less time!

Steps:
- Line a baking dish with parchment or waxed paper.
- Combine peanut butter and butter in a microwave-safe bowl. Microwave on high in 30-second increments, stirring in between, until melted and thoroughly combined. Allow mixture to sit and cool for 2 to 3 minutes.
- Mix in powdered sugar, 1/2 cup at a time, until well incorporated. Press into the prepared dish and place in the refrigerator. Chill for at least 2 hours before serving, or overnight for a firmer fudge.
