MEXICAN MIGAS

This is an easy Mexican breakfast dish that everybody loves. It's also great for brunch.

Steps:

  • Grease a large skillet with olive oil and place over medium-high heat. Add chorizo and cook until chorizo begins to get crispy, 5 to 6 minutes. Add torn tortillas and cook until crispy and golden brown, 7 to 8 minutes. Add onion, jalapeno, and garlic; cook until vegetables start to get tender, 5 to 6 minutes.
  • Pour in eggs and hot sauce and cook, stirring occasionally, until eggs are close to your desired doneness, about 5 minutes. Season with salt and pepper. Stir in tomatoes, avocado, lime juice, and Cheddar cheese. Continue cooking until eggs are scrambled to your desired doneness. Portion migas into serving bowls and top each with a dollop of sour cream.

Steps:

  • In a skillet, fry corn tortillas in hot vegetable oil until crispy. Drain. Remove oil from heat, Cut tortillas into bite-sized pieces. In butter, saute bell peppers and onion until soft. Add tomatoes. Beat eggs well. Add eggs to sauteed vegetables. Add tortilla chips. Scramble until eggs are done.

  • Stir together salsa, beans, and 3 tablespoons cilantro in medium bowl. Season salsa mixture with salt. Set aside.
  • Melt butter in heavy medium skillet over medium-low heat. Whisk eggs, remaining 2 tablespoons cilantro, and 1 tablespoon water in large bowl. Season with salt and pepper. Pour egg mixture into skillet. Add cream cheese pieces. Cook until eggs are creamy and softly set, stirring constantly, about 5 minutes. Spoon eggs into warmed taco shells. Top with salsa mixture and serve.

Steps:

  • Whisk eggs, salt and pepper in large bowl until well blended. Heat oil in 12-inch nonstick skillet over medium-high heat. Working in batches, add tortilla strips; cook just until softened, about 15 seconds per batch. Drain on paper towels. Add green onions and chili to skillet; stir 2 minutes. Reduce heat to medium. Add eggs and tortilla strips to skillet and stir until almost set, about 4 minutes. Add cheese, tomatoes and cilantro. Stir until eggs are set and cheese melts, about 1 minute. Serve immediately.

  • Combine first 5 ingredients in a bowl and mix to combine.

  • Prepare Migas Ingredients: In a bowl, break open 8 whole eggs (discard shells). Add 2 tablespoons of heavy cream. Add 1/2 tsp salt and 1/4 tsp black pepper. Beat well for one minute or until eggs are not lumpy. Set Aside. Dice onion, red bell pepper and mince jalapeno. Set aside. Slightly crush *tortilla chips to yield bite size pieces. (I break each tortilla triangle chip into three pieces.)
  • Prepare Migas: In a wide skillet, heat 2 tablespoon of oil. Add diced veggies - onion, bell pepper and jalapeno with taco seasoning. Saute until bell peppers are soft (3-4 minutes). Add broken tortilla chips and mix with veggies for 1 minute.
  • Add beaten egg mixture. For **soft scrambled eggs, quickly fold eggs mixture with veggies and chips until eggs just start to set (60 seconds to 1.5 minute). Take off heat. Add cheese, cilantro. Fold into scrambled eggs. Garnish with diced avocado, pico de gallo, more cilantro. Serve immediately. Enjoy!
