MIKE'S DEER TAMALES

the best deer tamales i've eaten. quite a bit of work but believe me it's well worth it. I use deer bacon burger with green onion and cheese processed at a deer processer close by. regular deer burger can also be used.

Steps:

  • 1:in large skillet or dutch oven,brown venison in bacon drippings.Add sugar,garlic,tomatoe paste and spices.
  • 2:meanwhile soak ancho chiles in boiling water until soft.Add chipotle peppers.
  • put anchos and chipotles with a small amount of reserved soaking liquid in food processor or blender and puree.
  • 3:Add pureed chiles and 6 cups water to meat mixture.
  • 4:cook until reduced by half.
  • 5:puree meat until smooth.Cook until all water is evaporated.Let meat cool.
  • 6:In large bowl beat lard with electric mixer until fluffy.
  • 7:In seperate bowl mix tamale mix with salt and baking powder.Add warm chicken broth and stir to combine.(Hands on works best).
  • 8:Add tamale mix to lard in batches and beat on high speed in between.Beat until spoonfull of mixture floats in glass of water.
  • To assemble:.
  • 1:Spread dough on corn husk and fill with about 1 tbs. of meat along middle line of dough.Roll husk to enclose filling inside dough.Fold and tie small end to seal.
  • To cook:.
  • 1:Place tamales on folded end in steamer.Tie bundles of 6 with twine to hold together.Steam for 2 1/2 to 3 hours.
  • "ENJOY".

2 lbs deer, burger
6 ancho chilies, stems and seeds removed
3 -4 canned chipotle peppers in adobo seasoning (or to taste)
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons chili powder
3 tbs.bacon drippings (unless using bacon burger)
1 teaspoon sugar
2 tablespoons tomato paste
4 garlic cloves, minced
6 cups water
salt
6 cups masa harina
1 lb lard
1 1/2 teaspoons salt
3 teaspoons baking powder
6 cups warm chicken broth
2 teaspoons ground cumin
2 teaspoons chili powder
1 (16 ounce) package corn husks, soaked in water for 2 hrs

HOT TAMALES (LOUISIANA STYLE)

These take a bit of time to roll, but the end result is well worth the effort. My Maw maw-in-law taught me how to make hot tamales with this recipe (she learned how to make them from a friend in Texas.) You can adjust the spices to your tastes- my husband loves it when you use tablespoons instead of teaspoons, but I find it too hot. You can also use all beef instead of that 1 lb of pork, if you prefer. Tamale wrappers are available in specialty stores, or online, although some grocery stores carry them. You will need 80-100 6-inch paper tamale wrappers, which are not listed in the ingredients as they aren't food. This recipe makes a lot by design, and they freeze wonderfully. Hot Tamales (Louisiana Style) image

Steps:

  • Run onions, celery, garlic, and bell pepper through your food processor until they are finely minced.
  • In a very large bowl, combine ground meat, minced veggies, chili powder, cayenne pepper, and salt. Mix together thoroughly using your hands. Add in the rotel, 1 cup of corn meal, and 1 can of tomato sauce; mix again. (You need to mix the wet ingredients in separately from the spices so that the spices don't all clump together in one spot.)
  • Lay out your papers beside two baking sheets or trays. Add 1 cup of cornmeal to one baking sheet, to roll the tamales in (the other one is to stack completed tamales on.)
  • Pinch off some of the meat mixture, and form into a ping pong sized ball. Roll it in the cornmeal, coating it as thick as you can. Place in the center of a tamale paper on one side, and roll. The ball should squish into a log, leaving an inch of the wrapper empty on either end. Press down the top of both empty ends, and fold the two sides of the ends in before folding them under the tamale.
  • Repeat with the remainder of the meat mixture. After a few, you get the feel of how much meat it will take to fill the wrapper up enough. We got 75 tamales out of one batch, it depends on how big you make them.
  • In a large dutch oven, pour in the 1/2 cup oil and 1 can tomato sauce. Cover with a layer of tamales, then a can of sauce, and a sprinkle of chili powder, repeating until you run out of tamales. Fill the pan with water until the tamales are just covered.
  • Bring to a boil, lower the heat and simmer 2 - 2 1/2 hours till done, adding water if necessary.

1 lb ground pork
3 lbs ground beef
2 onions
2 (10 ounce) cans rotel (diced tomatoes in green chilies)
1 cup cornmeal (for filling)
2 cups cornmeal (for rolling)
2 teaspoons cayenne pepper (to taste)

4 stalks celery
4 garlic cloves (or 1/4 cup minced garlic)
8 (7 ounce) cans tomato sauce
5 teaspoons chili powder
1/4 cup salt (to taste)
1/2 cup oil (for the sauce)

REAL HOMEMADE TAMALES

I had been looking for a Tamale recipe for years. One day I went to the international market and stood in the Mexican aisle till a woman with a full cart came by. I just asked her if she knew how to make Tamales. This is her recipe with a few additions from me. The pork can be substituted with either chicken or beef. This is great served with refried beans and a salad.

Real Homemade Tamales image

Steps:

  • Place pork into a Dutch oven with onion and garlic, and add water to cover. Bring to a boil, then reduce heat to low and simmer until the meat is cooked through, about 2 hours.
  • Use rubber gloves to remove stems and seeds from the chile pods. Place chiles in a saucepan with 2 cups of water. Simmer, uncovered, for 20 minutes, then remove from heat to cool. Transfer the chiles and water to a blender and blend until smooth. Strain the mixture, stir in salt, and set aside. Shred the cooked meat and mix in one cup of the chile sauce.
  • Soak the corn husks in a bowl of warm water. In a large bowl, beat the lard with a tablespoon of the broth until fluffy. Combine the masa harina, baking powder and salt; stir into the lard mixture, adding more broth as necessary to form a spongy dough.
  • Spread the dough out over the corn husks to 1/4 to 1/2 inch thickness. Place one tablespoon of the meat filling into the center. Fold the sides of the husks in toward the center and place in a steamer. Steam for 1 hour.
  • Remove tamales from husks and drizzle remaining chile sauce over. Top with sour cream. For a creamy sauce, mix sour cream into the chile sauce.

  • In a large skillet, heat oil over medium heat. Add onion, tomatillos, garlic and jalapeno and saute for 3 to 4 minutes. Add chile powder, cumin, salt and cooked venison, and stir to blend flavors. Simmer for 2 to 3 minutes, and then allow to cool.
  • For each tamale, lay the corn husk on a flat surface with the narrow end pointing toward you. Take about 2 to 3 tablespoons of the masa, and spread evenly along the bottom quarter of the corn husk, about 1/2 inch from any edge of the husk. In the center of the masa, place a few tablespoons of the stuffing mixture. Fold the left edge over the stuffing. The idea is to surround the stuffing with masa. Fold the right edge over, and fold the bottom up toward the center.
  • Place in a hot steamer basket with the water level just under the bottom of the basket. Place tamales fold-side-down in basket, leaving a little room between each so that steam can cook each one. As they steam, check to make sure there is at least an inch or so of water in the pot. Tamales will take 25 to 40 minutes to steam, depending on how big they are. They will be soft, moist and hot when cooked and will firm up as they start to cool.
