MILLION DOLLAR CAKE
I need a "Million Dollar" recipe because when I asked my DIL what I could bring for dinner, she joked "How about a million dollars?"!!! I found this on All Recipes where it got rave reviews. This suits my family's tastes perfectly. Make the day before.

Steps:
- Mix and bake cake mix as per package instruction for two 8 or 9 inch round layers.
- Let layers cool, and then split each layer in half so as to have 4 layers.
- In a large bowl, whip cream cheese until soft, and then gradually mix in confectioners' sugar.
- Stir in the pineapple with juice and the drained mandarin oranges, reserving about 5 mandarin orange slices to decorate the top of cake.
- Mix in the dry pudding mix.
- Fold in the whipped topping.
- Place one cake layer on a cake plate cut side up; spread with frosting.
- Place another layer cut side down on the first one, and top with more frosting.
- Repeat until all layers are used, spreading last bit of frosting on top and sides of cake.
- Decorate with reserved mandarin orange slices.
- Refrigerate overnight before serving.

- Cream the butter; gradually add sugar, beating at medium speed of an electric mix until light and fluffy.
- Add the eggs, one at a time, beating after each addition.
- Add the flour to butter mixture alternately with the milk, beginning and ending with flour mixture.
- Mix after each addition.
- Stir in almond and vanilla extracts.
- Pour the batter into a greased and floured 10-inch tube pan.
- Bake at 300 degrees for 1 hour and 40 minutes or until a wooden pick inserted in the center of the cake comes out clean.
- Cool in pan for 10 to 15 minutes.
- Remove to wire rack.
- Cool completely.

- Grease and flour a 10-cup tube pan, or 2 loaf pans. Set aside. Preheat oven to 300 F. In a large bowl, whisk together the flour, baking powder, and salt. Set aside. In another large mixing bowl, beat butter and shortening on medium speed of mixer until smooth and very creamy, 3 4 minutes. GRADUALLY the add sugar, continuing to beat until light and fluffy. Add eggs, ONE at a time, beating just until each one is incorporated. Beat in the flour mixture and milk, ALTERNATELY in thirds, into the creamed mixture, beginning and ending with flour. Beat at low speed just until blended after each addition. Stir in the vanilla and almond extracts. Pour into prepared pan/pans. For tube pan, bake for about 1 hour and 30-40 minutes or until a long wooden pick inserted in center comes out clean, for loaf pans, about 1 hour and 10-15 minutes. Cool in pan on a wire rack 10 to 15 minutes. Remove from pan, and cool completely on a wire rack.
MILLIONAIRE'S CAKE
This cake is more of a layered torte, than a frosted cake. It is kept in the refrigerator and is very delicious. I have been making this cake for many years and recently made it for my nephew's 24th birthday. It is his favorite.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan.
- Drain pineapple. Put pineapple in a clean layered cheesecloth and wring out remaining juice. If pineapple is not well drained, it will make the filling runny.
- Mix and bake cake according to package instructions. Pour 1/2 of the batter into the prepared pan. Discard or find another use for the remaining half of the batter.
- Bake at 350 degrees F (175 degrees C) for 20 minutes or until done. Let cake cool in pan on a wire rack.
- Beat softened cream cheese until fluffy. Slowly add milk, combining thoroughly. Add instant pudding and beat until thick. Pudding mixture will thicken when refrigerated. When cake is cool and pudding mixture is thickened you can assemble the cake. Spread pudding mixture on top of the cooled cake. Sprinkle drained pineapple over pudding. Carefully spread thawed frozen whipped topping over all. Sprinkle chopped walnuts over all. Refrigerate. Enjoy!
