MINI SWISS ROLLS

- For the cake: Preheat the oven to 375 degrees F. Coat an 18-by-13-inch rimmed baking sheet or jelly roll pan with cooking spray; line the bottom with parchment paper and spray the parchment.
- Beat the cream of tartar and egg whites in a medium bowl with an electric mixer on medium speed until soft peaks form, about 3 minutes. Gradually beat in 1/4 cup of the sugar. Increase the speed to medium high and beat until stiff peaks form, 3 to 4 minutes.
- Whisk the egg yolks with the milk, oil, vanilla and remaining 1/2 cup sugar in a large bowl. Sift the flour, cocoa powder, baking powder and salt in a medium bowl; whisk into the yolk mixture until smooth. Stir one-third of the egg white mixture into the batter with a rubber spatula, then gently fold in the remaining egg white mixture in 2 batches. Spread the batter in the prepared baking sheet. Bake until the cake springs back when gently pressed, about 10 minutes. Let cool 5 minutes.
- Generously sift cocoa powder over the top of the warm cake and loosen the edges with a knife; lay a clean kitchen towel (not terry cloth) over the cake. Place another baking sheet over the towel and flip the cake with the baking sheets to invert it onto the towel. Remove the top baking sheet and parchment, then dust the top with cocoa powder. Starting at the long end, roll up the cake and towel together. Transfer seam-side down to a rack and let cool completely.
- For the filling: Whip the cream, corn syrup and vanilla in a medium bowl with an electric mixer until stiff peaks form. Refrigerate until ready to use.
- For the glaze: Heat the chocolate, cream, coconut oil and vanilla if using in the top of a double boiler, stirring occasionally, until the chocolate is melted and the mixture is smooth and warm, about 4 minutes. Let cool slightly.
- To assemble: Unroll the cake and spread with the filling. With one of the short edges facing you, slice the cake horizontally into 6 strips, then slice in half vertically so you have twelve 3-by-6 1/2-inch strips. Roll the strips to form tight mini jelly rolls. Dust off any excess cocoa powder. Chill for 15 minutes.
- Fit a baking sheet with a wire rack. Arrange the rolls on the rack so they are not touching and pour the glaze over them, completely covering the rolls on all sides. Chill at least 15 minutes to set the glaze before serving.
MIMI'S ROLLS
These are the rolls that I have been making for years. The recipe makes a lot of them. You can make Parmesan Cheese Fingers with part of it or all of it (directions follow). They are so good. Keep dough soft for fluffy rolls.

- Dissolve the yeast and sugar in the lukewarm water; let proof for about 15 minutes.
- Add the lukewarm milk, butter, sugar, and salt; mix well.
- Add 4 cups of the flour and mix well.
- Add the beaten eggs and mix well.
- Add the last of the flour adding only enough to get a soft dough (probably will need most of it).
- Place on floured board and knead for about 3 minutes.
- Place in a greased bowl and rise once--about 1-1 1/2 hours.
- Make rolls and place on a greased pan.
- Rise till rounded in pan--about 1 hour--don't over-rise.
- Bake in a 375-400 degree oven for about 10-15 minutes--if they are getting too brown, cover them with a piece of foil.
- CHEESE FINGERS: Make dough fingers about 2"-3" long; dip one side in melted butter and then in parmesan cheese--bake.
MIMI'S BISCUITS
My mother-in-law made the best biscuits in the world. I tried to make them like hers but failed. I tried many recipes and this is the one I came up with about 30 years ago. It is as close to hers as I can get. Even my husband says they are like hers.

Steps:
- Put the first 5 ingredients in a bowl and mix.
- Cut in with a pastry blended the shorening till it resembles coarse crumbs.
- Add the milk all at once and stir only until the dough follows the fork around the bowl.
- Turn out lightly on floured surface and gently knead to pull together about 1/2 minute.
- Pat or roll 1/2" thick; cut with biscuit cutter.
- Bake on ungreased sheet at 450 degrees for 10-12 minutes.

MINI PEPPERMINT ROLLS

- For the rolls: Preheat the oven to 350 degrees F. Grease an 8-inch square cake pan with cooking spray or butter.
- Mix the granulated sugar, melted butter, vanilla extract and peppermint extract in a bowl. Unroll the crescent dough sheets and coat each sheet in half of the butter mixture, spreading it to the edges of the sheets. Roll each sheet tightly, starting with the longer side, and place the seam side down. Cut each roll into 8 equal pieces, making a total of 16 pieces. Arrange the pieces in the prepared cake pan.
- Bake until golden and cooked through, 22 to 24 minutes. Let cool completely, about 30 minutes.
- For the glaze: Meanwhile, make the glaze by whisking together the powdered sugar, milk and peppermint extract, Add the melted butter and red food coloring, whisking until completely combined.
- Remove the cooled rolls from the pan and top each one with the glaze. Sprinkle over the crushed candy canes and serve.
MIMI'S NEVER FAIL REFRIGERATOR ROLLS
These are one of the types of rolls I make for every holiday. I had very disappointed grandson's when my oven was broken and couldn't make them once. This is a very requested recipe that I have used since the 70s. This dough can be made ahead and kept up to 1 week in the fridge, but it doesn't last that long around here.

- 1. Mix 1st 3 ingredients in a small bowel. Let yeast and sugar dissolve and start bubbling.
- 2. In a large bowl I add water and shortening and then microwave until water is warm enough to melt shortening. I then stir in sugar and salt. When it has cooled down to lukewarm I add the yeast mixture and combine. Beat egg and add to bowl.
- 3. Add flour and mix well. Form into a ball, pour a little bit of oil into bottom of bowl and turn dough to coat on all sides. Cover and let rest untl doubled in size.
- 4. Pre-heat oven to 400. Mash down dough and knead on a flour covered surface until smooth and elastic. At this point dough may be covered and kept in fridge until ready to use. Just remove dough from fridge and allow to warm a little then proceed with recipe.
- 5. In 13 x 9 pan melt 1/2 to 1 stick of butter. Pinch pieces of dough off and form into balls of dough or whatever shape you prefer. Cover and let rise. Bake until golden brown and serve.
MINI CINNAMON ROLLS

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Unroll crescent roll dough onto a silicone baking mat or lightly greased work surface and separate into 4 rectangles; firmly press diagonal perforations with your fingers to smooth them out.
- Mix brown sugar and cinnamon together in a small bowl; sprinkle mixture evenly over rectangles.
- Roll each rectangle into a log starting from the longer side; cut each log into 1/2-inch thick slices. Arrange mini cinnamon rolls close to one another on the baking sheet.
- Bake the mini cinnamon rolls in the preheated oven until golden, 10 to 13 minutes. Transfer baked rolls to a plate and set aside to cool for 1 minute.
- Combine the confectioners' sugar, milk, and vanilla extract together in a small bowl to make a smooth icing. Pour icing over warm rolls.
