Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Cream shortening, sugar and eggs together, then beat in vanilla. Sift the flour, salt and baking soda together, and add to shortening mixture. Mix until well blended. Stir in the nuts and mincemeat and mix well. Drop by teaspoonfuls on the cookie sheet.
  • Bake 8 to 10 minutes until light brown.

Steps:

  • Preheat oven to 375 degrees.
  • In large bowl, beat shortening and sugar until fluffy.
  • Add eggs; beat well.
  • Stir together dry ingredients; gradually ad to shortening mixture.
  • Mix well.
  • Stir in mincemeat.
  • Drop by rounded teaspoonfuls, 2 inches apart, onto greased baking sheets.
  • Bake 8-10 minutes or until lightly browned. Cool.
  • Frost if desired.

  • Heat the oven to 180C/160C fan/gas 4. Beat the butter with both types of sugar and the salt. Beat in the egg, vanilla extract and mincemeat. Stir in the flour and bicarbonate of soda, then chill for 20 mins.
  • Scoop tablespoons of the mixture onto two lined baking sheets, leaving a bit of space between each so they can spread. Bake for 10-12 mins, or until the cookies are just firm around the edges but still soft in the middle - they will firm up as they cool. Transfer to a wire rack and leave to cool.

Steps:

  • Heat oven to 375°F Line 2 cookie sheets with parchment paper.
  • For dough, whisk together flour, baking soda and salt in a medium bowl; set aside. Beat shortening and granulated sugar in a large mixer bowl on medium-high speed 2 minutes, until light and fluffy. Beat in the eggs one at a time, beating well after each addition. Reduce speed to low and gradually add flour mixture just until combined. Stir in mincemenat until well mixed.
  • Drop dough by measured tablespoons onto prepared cookie sheets, 2 inches apart. Bake 10 - 12 minutes, until golden brown. Cool cookies on cookie sheets for 1 minute. Transer cookies to wire racks and cool completely.
  • Meanwhile, for coffee frosting beat together confectioners sugar, coffee and melted butter in a large mixer bowl on medium speed until smooth.
  • Frost each cookie with about a teaspoon of icing. Top each cookie with 1 pecan half.
