MING TSAI'S TRADITIONAL SPICY SAMBAL image

Steps:

  • * In a medium saucepan, combine the jalapeños, Thai chiles, garlic, and oil and cook over low heat until the ingredients soften and blend, about 15 minutes. * Add the vinegar and cook until reduced by half, 12 to 15 minutes. * Remove from the heat and add the sugar and salt. * Cool to room temperature. * Transfer the mixture to a food processor and pulse 3 or 4 times to chop to a salsa-like texture. * Store in the refrigerator in a tightly sealed jar. Lasts 1 month, refrigerated.

900 g stemmed and chopped very roughly jalapeno chilli's
10 Thai Chilli's or 1 tablespoon red pepper flakes
1 cup minced Garlic
¼ cup grapeseed or canola oil
2 cups rice wine vinegar
1 teaspoon Sugar
2 teaspoons Salt

Steps:

  • In a bowl, mix all ingredients. Chill before serving.

Shredded Lamb Sandwich with Dijon-Sambal Aioli and Spicy Potato Chips image

Steps:

  • In a large bowl, combine lamb with aioli and check for seasoning. Dress toasted bread with tomato and lettuce and top with lamb.;
  • In a food processor, add yolks, sambal oelek and mustard. Slowly drizzle in oil to emulsify. Add juice and garlic. Season with salt and pepper. Will keep in the refrigerator for 2 weeks.
  • Heat oil to 375 degrees in fryer. Fry chips until golden brown. Remove immediately and season before oil dries up. Serve fresh and warm.

2 cups shredded lamb shank meat
4 tablespoon Dijon-sambal aioli
4 sourdough rolls, or bread of your choice, toasted
1 tomato sliced
2 cups shredded iceberg lettuce
Salt and black pepper to taste
Kosher pickle spears (optional)
2 egg yolks* (See Disclaimer)
1 tablespoon sambal oelek
1 tablespoon Dijon mustard
2 cups canola oil
1 tablespoon fresh lemon juice
1/2 tablespoon garlic, finely chopped
Salt and black pepper, to taste
Fryer with canola oil
4 large kennebeck or russet potatoes, sliced thinly and stored in ice water
Chili Salt (3:1:1 kosher salt, sugar, chili powder)

MING TSAI'S CHICKEN CHOW MEIN MY WAY

Found this on another web site and just tried it. I actually used 5 packets of chicken ramen noodles instead of the lo mein noodles and chicken broth. I prepared them as directed, then used a slotted pasta spoon to remove the noodles to a cold bowl, leaving the broth behind. I then put 2 ladles of the "ramen" broth in the pan instead of the broth. The sambal oelek is hot, so cut back on it if you want less heat. I did not add salt because the ramen broth already contains some.

Ming Tsai's Chicken Chow Mein My Way image

Steps:

  • In a large bowl, combine the cornstarch and wine and mix. Stir in the oyster sauce, ginger, scallions, the 1 teaspoon pepper, and the sambal oelek. Add the chicken, stir to coat, and allow to marinate covered and refrigerated for at least 2 hours and preferably overnight.
  • Bring a large pot of salted water to a boil. Fill a bowl with water and add ice. Add the lo mein to the boiling water and cook until al dente, about 5 minutes for fresh, 10 to 15 minutes for dried. Drain and transfer the noodles to the ice water. When cold, drain and toss with 1 tablespoon of the oil. Set aside.
  • Heat a wok over high heat. Add 2 tablespoons of the oil and swirl to coat. When the oil shimmers, add the garlic and shiitakes and stir-fry until the mushrooms are soft, about 4 minutes. Remove the mushrooms and set aside. Add the remaining 2 tablespoons of the oil and, when hot, add the chicken (shake off excess marinade) and stir-fry until almost cooked through, 6 to 8 minutes. Add the bok choy and pea pods and stir-fry until crisp-tender, about 3 minutes.
  • Add the stock and season with the salt and pepper to taste. Add the reserved shiitakes and the noodles. Stir to coat, and heat through, about 5 minutes.
  • Correct the seasonings and serve.

CRAZY CHICKEN - RICE NOODLE STIR-FRY

This is chef Ming Tsai's take on a traditional Thai dish. It's called crazy because of it's spiciness. You can always decrease the amount of sambal oelek if you don't like dishes too spicy (or increase it if you like it really spicy!). This recipe is perfect for a busy night. It's quick and simple to prepare. If you want to make this a one dish meal, I think you could probably stir-fry in some broccoli or peas, etc. Enjoy!

Crazy Chicken - Rice Noodle Stir-Fry image

Steps:

  • Fill up a large bowl with warm water. Add the noodles and soak them until they are tender, about 20 minutes. Drain and set aside.
  • While the noodles are soaking, you can combine the fish sauce, lime juice, sugar and sambal - in a small bowl. Stir until dissolved.
  • Heat up a wok or large skillet over high heat. Add the oil and swirl to coat the pan.
  • Add the shallots and stir-fry until brown - about 1 minute.
  • Add the chicken and stir-fry, breaking up the meat, until cooked through - about 3 minutes or so.
  • Add the noodles and sauce mixture and heat through, stirring.
  • Add the scallions and basil ribbons and give them a toss.
  • Garnish (opt.) with the lime wedges and basil sprigs and serve immediately.

8 ounces transparent rice noodles (rice sticks)
2 tablespoons Thai fish sauce (nam pla)
2 tablespoons fresh lime juice
1 teaspoon sugar
1 tablespoon sambal oelek
3 tablespoons canola oil
3 shallots, sliced 1/8 inch thick

1/2 cup scallion, green and white parts, sliced 1/8 inch thick
