Mini Zucchini Pizzas image

Steps:

  • Preheat broiler. Arrange zucchini in a single layer on a greased baking sheet. Broil 3-4 in. from heat just until crisp-tender, 1-2 minutes per side., Sprinkle zucchini with salt and pepper; top with sauce, cheese and pepperoni. Broil until cheese is melted, about 1 minute. Sprinkle with basil.

Zucchini Pizza Bites image

Steps:

  • Preheat the oven 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
  • Slice the zucchini 1/4-inch thick; you should get about 24 slices. Place the slices on the prepared baking sheet and sprinkle with salt. Top each slice with 1/2 teaspoon marinara sauce and 1 teaspoon mozzarella.
  • Bake until the cheese is melted and bubbly, about 8 minutes.

Cooking spray
1 medium zucchini
Kosher salt
1/4 cup marinara sauce
1/2 cup shredded mozzarella

Steps:

  • 1. Step 1 Wash the zucchini and slice into 24 rounds.
  • 2. Step 2 In 3 soup size bowls prepare the breading mixes. In bowl #1, add the flour. In bowl #2, beat the egg and the milk together with a fork. In bowl #3, mix the panko breadcrumbs with the Parmesan cheese. Dip the Zucchini rounds first in the flour, then the egg mixture, and finally in the breadcrumb mix.
  • 3. Step 3 Add the canola oil in a large fry pan and heat to medium high. Carefully add the zucchini rounds. Turn over one time and cook till golden brown and crispy. Place on a greased cookie sheet.
  • 4. Step 4 Top each round with a spoonful of the tomato sauce, and then the Mozzarella cheese. Top this with a pepperoni piece.
  • 5. Step 5 Bake about 15 minutes or till hot and bubbly.

1 medium thin green zucchini squash
1/2 c flour
1 egg
1/4 c milk
1/2 c panko seasoned breadcrumbs
1/2 c grated parmesan cheese
1/4 c canola oil
1 c tomato sauce
1 1/2 c shredded part skim mozzarella cheese
