CHICKEN POPPY SEED SALAD

Juicy berries, crisp sugar snap peas and crunchy pecans complement the lime-marinated chicken in this pretty salad. The homemade sweet-sour dressing is simply delicious. -Rebekah Radewahn, Wauwatosa, Wisconsin

Chicken Poppy Seed Salad image

Steps:

  • In a large bowl, combine limeade concentrate and pepper; add the chicken. Cover and refrigerate for 2 hours., Drain and discard marinade. In a large skillet, saute chicken in oil until no longer pink., Meanwhile, in a blender, combine the vinegar, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds., In a large serving bowl, toss spinach with strawberries, peas, onion, chicken and 1/2 cup dressing. Sprinkle with pecans. Refrigerate leftover dressing.

1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

Steps:

  • Cook pasta as directed on package. Drain; rinse with cold water to cool. Drain well.
  • In large bowl, gently mix cooled cooked pasta, chicken, grapes and celery. Pour dressing over salad; toss to coat well. Serve immediately.

Steps:

  • Cook the frozen ravioli until done and rinse with cold water and drain well.
  • In a large bowl combine rest of the ingredients except for the spinach.
  • Add the ravioli and toss gently.
  • Place spinach on serving platter and top with salad.
  • Enjoy.

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Place in a large bowl; add cheese, broccoli, carrots, cucumber, tomatoes and onions. In a blender, combine vinegar, sugar, garlic, onion, mustard and salt; gradually add oil, blending until smooth. Add poppy seeds. Pour over pasta mixture and toss. Cover and refrigerate for at least 1 hour.

Great reviews every time I make this. A nice change from the standard pasta salads. There are many renditions to this salad. There's really no way of messy it up. I like the miniature ravioli's (preferably fresh) but others have used tortellini's & rotini also. Give it a try. I think you'll love it.

Steps:

  • Cook mini ravioletti to package directions. Throw in freezer for 10 minutes to chill.
  • In the mean time cut up veggies, cheese & chicken. (please no canned chicken).
  • Add cut up veggies, cheese, chicken & pine nuts to mini ravioli's.
  • Add Poppy Seed Dressing little by little to the desired amount.
  • If you like things real sweet add the craisins.
  • Toss, refrigerate & check again in 2 hours Add more dressing if needed.
  • Always better made a day in advance but 3 to 4 hours works too.
