Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill image

Steps:

  • Soak an untreated cedar plank (or planks) large enough to hold a side of salmon (5 to 7 inches wide and 16 to 20 inches long) in water, weighting it with something heavy, like a brick, so it stays submerged 30 minutes to 24 hours.
  • When ready to grill, either build a charcoal fire in half the grill or turn grill burners on high for 10 minutes. Meanwhile, mix oil, garlic, dill, salt, pepper and lemon zest; rub over salmon and into scored areas to coat.
  • Place soaked cedar on hot grill grate, close lid, and watch until wood starts to smoke, about 5 minutes. Transfer salmon to hot plank, move salmon off direct charcoal heat or turn burners to low, and cook covered until salmon is just opaque throughout (130 on a meat thermometer inserted in the thickest section) 20 to 25 minutes or longer, depending on thickness and grill temperature. Let sit 5 minutes; serve with lemon wedges.

  • Soak cedar plank in water for at least 1 hour.
  • Preheat grill for indirect cooking over medium heat.

Steps:

  • Soak cedar plank in salted water for 2 hours, then drain. Remove skin from salmon fillet. Remove any remaining bones. Rinse the salmon under cold running water and pat dry with paper towels. Generously season the salmon with salt and pepper on both sides. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard.
  • Set grill for indirect grilling and heat to medium-high. Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135 degrees F. Transfer the salmon and plank to a platter and serve right off the plank.
  • Cook's Note: A direct method to grill the salmon may be used. Soak the cedar plank well. Spread the mustard and brown sugar on the salmon, but do not place the fish on the plank. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Turn the plank over and place the fish on top. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F. Check the plank occasionally. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill.

  • Soak cedar grilling plank in water to cover 2 hours, keeping it immersed.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure . Open vents on bottom and lid of charcoal grill.

Steps:

  • Mix together salt, pepper and mustard. Brush tops of fillets with a little butter and sprinkle both sides with dry mustard mixture.
  • Preheat the broiler. Soak the shingles in cold water for 5 to 10 minutes, then put them under the hot broiler 4 to 5 inches from the heat source for 2 to 3 minutes until browned on one side. Carefully take the shingles from the broiler.
  • Immediately, so that the shingles do not cool, lay two fillets on the browned side of each shingle. Return the shingles to the broiler and cook the fish for about five minutes. Take the shingles from the broiler and lift the salmon from them.
  • Place three to four tablespoons of soft corn pudding on a plate. Top with salmon fillet and spoon vinaigrette over the top.

  • Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
  • In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.

Steps:

  • Soak cedar planks in water for 4 to 6 hours. (This is essential to make sure planks do not catch fire, so don't skimp on this step)
  • Preheat grill to high.
  • Season the soaked planks with salt and pepper and place on the grill for 3 to 5 minutes with lid closed. They will begin to crackle and smoke.
  • Place salmon fillets carefully on cooking planks, skin side of the fish on the plank. Close the lid and bake the fillets for 12-15 minutes. Check periodically to make sure cooking planks have not caught fire.

Steps:

  • Place a nail on the long, thin edge of the plank, 3 inches from the end. Hammer it halfway into the plank. Continue, hammering nails along the length of the plank at 2-inch intervals. Repeat on the opposite edge, with the first nail 4 inches from the end.
  • Combine salt, pepper, and dry mustard in a small bowl and set aside.
  • Brush one side of the plank with 1 tablespoon olive oil and arrange 10 dill sprigs on it. Place the salmon, skin side down, over the dill. Brush the salmon with remaining 2 tablespoons olive oil and rub mustard mixture over the entire surface. Arrange remaining 10 dill sprigs over salmon.
  • Wrap one end of braided picture wire around the head of the first nail hammered. Pull the wire across the top of the salmon to the first nail on the opposite side; wrap the wire around the nail head, keeping the wire taut. Continue lacing until the wire has been fastened to all nails and salmon is secure.
  • Stack bricks (long sides facing each other) in two columns 3 feet apart. Tne column should be 6 bricks and the other 5. Build a medium-hot wood fire between them.
  • Center the plank, fish side down, over the fire with the salmon's tail closest to the 6-brick stack. Cook over fire until flesh is firm and flaky, about 30 to 35 minutes; cooking time varies depending on the heat of the fire and thickness of fish. Spritz fish and plank with water if they smolder. If the fish begins to burn before the flesh is cooked through, add another brick to each stack. If the fire is too cool, remove a brick from each stack.
  • When cooked, remove from fire and unwrap wire. Discard dill and cut fish directly on plank. Serve with grilled pepper relish.

  • Sprinkle BBQ seasoning on salmon fillets.

  • Do this 9 hours or more ahead; place the cedar planks in water to completely cover them (use a heavy object to place on top of them to weigh down the planks).
