BLACKBERRY AQUA'S FRESCA

Blackberry Aqua's Fresca image

Steps:

  • Bring 8 cups of water to a boil in a large saucepan over medium heat. Add blackberries, mint, and tea bags. Remove from heat and let stand 1 hour at room temperature. Strain the mixture through a sieve, into a pitcher and discard the tea bags and solids. Add sugar and lemon juice to the tea, stirring until sugar dissolves. Pour into glasses or cups and garnish each serving with a mint sprig.

8 cups water
2 cups fresh blackberries
1/4 cup coarsely chopped fresh mint leaves, plus 8 fresh sprigs, for garnish
6 rosehip and hibiscus tea bags
3/4 cup granulated sugar
1 tablespoon fresh lemon juice

RASPBERRY PEACH AGUA FRESCA

Chilling time is cook time. If you want it right away, use 1 1/2 cups of ice cubes and one cup of water. Honey may be used instead of agave; you will be sweetening to taste. I don't always strain it, as I like the fruit pulp and fiber, but if you object to the raspberry seeds you should definitely strain it. This makes 2 generous servings.

Raspberry Peach Agua Fresca image

Steps:

  • Combine all ingredients in a blender jar and blend until smooth. Strain the mixture into a pitcher and add more agave if needed. Cover the pitcher and let chill for at least 1 hour before serving.

  • Bring 8 cups water to a boil ini a large saucepan. Add the raspberries, mint, and tea bags. Remove from heat. Let stand 1 hour at room temperature. Remove the tea bags, strain mixture through a sieve, reserving liquid. Discard solids. Add sugar and juice to tea, stirring until sugar dissolves.
  • Garnish with mint sprigs.
  • Makes 8 servings.

Steps:

  • Peel and thinly slice fresh ginger. Combine ginger, hibiscus flowers, and 3 cups boiling water in a medium pot. Let steep at room temperature for 30 minutes. Strain into a large pitcher, discarding solids. Add sugar; stir until dissolved. Add 8 cups cold water. Fill glasses with ice; pour agua fresca over and serve. DO AHEAD: Can be made 3 days ahead. Cover and chill.
