WATERMELON, LIME AND MINT GRANITA

- Working in 2 batches, puree watermelon in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon. Discard solids. Combine the watermelon puree, lime juice, mint and sugar in a 9 by 13-inch metal pan. Place mixture in the freezer, scraping thoroughly with a fork every 20 to 30 minutes for about 2 1/2 hours, or until the granita resembles coarse crystals. Scrape 1 last time and spoon into parfait glasses or bowls. Top with a mint sprig.
MINT JULEP GRANITA
A granita is essentially a fluffy, fancy snow cone. This is an adult-friendly, super refreshing version inspired by a cocktail.

- Put 6 or 7 glasses in the refrigerator to chill.
- Cook 3 cups water, the mint and sugar in a medium saucepan over medium-high heat, stirring occasionally, until the sugar is dissolved, about 2 minutes. Strain through a fine-mesh strainer into a medium bowl, pressing on the mint with the back of a spoon to extract all the juices. Let cool completely, or chill over an ice bath.
- Stir in the bourbon, and pour into a 3-quart (9-by-13-inch) glass or metal baking pan. Cover with plastic wrap, and freeze overnight.
- Scrape the surface of the ice with a fork in long, light strokes to create a snowy texture. Break up any remaining lumps. Freeze the granita again for at least 2 hours before serving. Fifteen minutes before you are ready to serve, put 6 to 7 glasses in the refrigerator to chill. Serve the granita in the glasses, garnished with fresh mint leaves.
WATERMELON GRANITA
A few lazy stirs as this granita sets up in the freezer is really the only tricky thing about this easy and refreshing dessert. It's also a perfect midafternoon cooler for a vacation house full of children.

- Cut about 1 pound watermelon into small chunks (discarding the rind), and freeze them. When they're frozen, put them in a blender with 2 tablespoons sugar and 2 tablespoons lemon juice, and blend until the mixture liquefies. Pour the mixture into a shallow glass or ceramic pan, and freeze for about 2 hours, breaking up the ice crystals with a fork every 30 minutes or so. It should be slushy and crunchy.

- In small saucepan, combine sugar, water and jelly; mix well. Cook over medium-high heat about 4 minutes or until sugar is completely dissolved and jelly is melted, stirring occasionally. Cool 5 minutes.
- Meanwhile, place watermelon in blender container or food processor bowl with metal blade. Cover; blend until smooth. Add cooled syrup and lemon juice; blend until mixed. Pour into 13x9-inch (3-quart) baking dish. Freeze at least 1 hour or until icy around edges.
- Stir and mash with fork to break up ice crystals. Freeze about 2 hours or until all liquid is frozen, breaking up mixture with fork every 30 minutes. Serve immediately or let stand at room temperature 5 to 15 minutes before serving. To serve, stir with fork; spoon into 6 individual dessert dishes.

- In a medium saucepan add the water, sugar and mint leaves and bring to a boil. Once the sugar has dissolved, turn off the heat and let the simple syrup cool.
- Remove the rind from the watermelong and cut the watermelon into chunks.
- In a blender add the watermelon, lime juice, mint leaves and cooled simple syrup. Puree it all together.
- Pour the mixture into a baking dish and freeze for at least 8 hours.
- Once frozen, take a fork and scrape the frozen mixture to create the granita texture.
- Serve and enjoy!
