MINUTE STEAK AND MUSHROOM SAUCE
One of my favorite meals to eat, this is sooo easy and can be done in about 30 minutes. Goes great with mashed potatoes and rolls of some kind are a MUST to sop up the extra mushroom sauce.

Steps:
- Slice mushrooms (if using fresh) and saute in butter until tender.
- If using a can, drain well.
- Set aside.
- In a large skillet, heat oil.
- Salt minute steaks and dredge in flour.
- Fry until breading is brown.
- **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
- This is what makes it GOOOOD!
- When the meat is fried, place on paper towels to drain excess oil.
- Place in a 2 quart casserole dish and keep warm.
- Leave 2 tablespoons of oil in the skillet and remove the rest.
- Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
- Let soup simmer on med-low heat until throughly heated.
- Pour over warm meat and serve.
ONE PAN TILAPIA FISH TACOS WITH 5 MINUTE MOLE
Steps:
- Season the fish with salt, to taste, and coat in anise seeds.
- In a large saute pan over medium-high heat, add the oil. When the oil is hot add the tilapia and saute until golden on 1 side. Flip them over and finish cooking on the other side. Remove the fish from pan to a plate and keep warm.
- In the same pan add the onion, garlic and tomatoes and saute until the onion is golden. Stir in the almonds and cumin seed and cook for 1 more minute.
- Deglaze the saute pan with the water and stir in the chili paste. Carefully transfer the mixture to a blender. Add the 2 teaspoons salt, the raisins, and the 1/2 corn tortilla and puree until very smooth.
- Briefly toast the remaining 8 tortillas over an open flame and lay 2 tortillas on each of 4 plates. Break up the fish and divide it evenly among the tortillas. Spoon the mole sauce over the fish, top with the shredded iceberg and garnish with the cotija cheese. Serve.
15-MINUTE STIR-FRIED STEAK TACOS
We slice skirt steak and cook it quickly at a high temperature to save time and keep the meat tender. Make sure you save the super flavorful collected juices from the steak and onions to drizzle on your tacos.

- Cut the steak along the grain into 3-inch pieces, then slice each piece across the grain into 1/3-inch-thick strips. Toss the steak in a medium bowl with the chili powder, oregano, sugar, 3/4 teaspoon salt and a few grinds of pepper.
- Heat a large nonstick skillet over high heat. Meanwhile, wrap the tortillas in a clean dishcloth, and microwave at 100 percent for 1 minute. Let sit, wrapped in the dishcloth, until ready to serve.
- When the skillet is hot, add the oil. Add the seasoned steak in an even layer. Don't stir for 2 minutes, then give the steak a good stir and let cook until browned, about 1 1/2 minutes more. Transfer the steak to a medium bowl. Immediately add the onions to the skillet, and stir until brown and slightly softened, about 1 1/2 minutes; transfer to the bowl with the steak, and stir to combine.
- Set up a taco bar with the steak and onions, wrapped tortillas, sour cream, guacamole, salsa verde, pico de gallo and cheese.
SAUTEED MINUTE STEAKS
These steaks are easy and appealing, and they have a spicy sauce that gives them nice zip.

- In a large resealable plastic bag, combine the flour, garlic salt and pepper. Add steaks, one at a time, and shake to coat. , In a large skillet coated with cooking spray, cook steaks in oil over medium heat for 3-4 minutes on each side or until no longer pink. Remove and keep warm. Stir in the remaining ingredients; heat through. Serve with steaks.

FANTASTIC TACO CASSEROLE!
I think this casserole tastes even better than a real taco, it is SO DELICIOUS! ...if you love tacos, then you will love this casserole! My recipe#76616 works great for this recipe. ALL ingredients can be adjusted to suit taste. It is best to prepare this casserole and bake right away as the broken tacos will get too soggy.

- Set oven to 350 degrees.
- Cook beef, onion, bell pepper, chili flakes and garlic until beef is no longer pink; drain then season with seasoning salt and black pepper (or cayenne pepper).
- Stir in water, taco sauce, green chiles, half of the olives and taco seasoning mix (you can use 2 packages of seasoning mix if desired for this).
- Cook over low heat for about 6-8 minutes.
- Layer HALF of broken shells on bottom of greased 13x9 baking pan; cover with HALF of meat sauce, then sprinkle with 2 cups (or to taste) cheddar cheese.
- Repeat with remaining broken taco shells, meat sauce and then top with remaining cheese (to prevent the cheese from getting hard, you can sprinkle on the last 10 minutes before the end of baking time and return to oven until melted).
- Bake for 20 minutes or until bubbly, and cheese is melted.
- After baking, sprinkle with remaining olives, tomatoes and green onions.
- **NOTE** I sometimes drizzle bottled salsa sauce (mild or spicy) on top of the ground beef and then on top before baking.

MINUTE STEAKS WITH TACO SAUCE
A real Mexican dish. This is my first attempt at a Mexican dish and I wanted to make it very simple, but very tasty.

Steps:
- Heat the butter and oil in a frying pan.
- Season the steaks with salt and pepper and fry for 1 minute on each side on fairly high heat.
- (add other spice if desired) Place the cooked steaks into a serving dish and Place in the oven to keep warm.
- Add mushrooms to the pan.
- Cook on high heat and lightly brown.
- Remove from pan and place in oven to keep warm.
- Pour the taco sauce in the pan and simmer for about 1 minute.
- Place the mushrooms and steaks on a plate and pour the taco sauce over the steaks.
- Garnish with the parsley.
- Serve.

My mother made me this recipe growing up and has always been a favorite so I started making it. It is very simple and quick but it is still very good. I hope you enjoy this too.

- Brown the cubed steaks in skillet, then drain fat.
- Add all the ingredients, mix well then cover.
- Cook on medium heat until steaks are tender.
MINUTE STEAKS WITH SHERRY-MUSHROOM SAUCE
Steps:
- In a small bowl, stir together the grilling blend, oregano, and paprika. Sprinkle over both sides of the beef. Using your fingers, gently press to adhere.
- In a large nonstick skillet, heat 1 teaspoon oil over medium-high heat, swirling to coat the bottom. Cook 2 of the steaks for 1 minute on each side, or until the desired doneness. Transfer to a platter. Repeat with the second 1 teaspoon oil and the 2 remaining steaks. Transfer to the platter.
- Pour the remaining 1 teaspoon oil into the same skillet, swirling to coat the bottom. Scrape to dislodge any browned bits. Cook the mushrooms for 4 minutes, or until beginning to richly brown, stirring frequently.
- Stir in the garlic. Cook for 15 seconds, stirring constantly.
- Pour in 1/4 cup sherry. Cook for 1 minute, or until slightly reduced. Remove from the heat.
- Stir in the half-and-half, salt, and remaining 1 tablespoon sherry. Spoon over the steaks. Sprinkle with parsley and pepper.
- Cook's Tip
- In some areas of the country, minute steaks may be called thin top round steak. Just be sure the meat is really thin. It will be very tender if you don't overcook it.

MINUTE STEAKS PARMESAN
Cut this out of a magazine years ago. Puts a nice little Italian twist on Cube Steaks and is quick and easy to prepare.

- Beat together egg, water, and pepper.
- Combine crumbs and half the cheese.
- Dip steaks in egg mixture, then in crumbs.
- In skillet, brown steaks in hot oil.
- Drain on paper toweling.
- Arrange steaks in 10x6x1 1/2" baking dish; cover with pizza sauce and sprinkle with remaining cheese.
- Bake in 325 degree oven for 20 minutes.
CONTEST-WINNING TACO CASSEROLE
My preschooler doesn't eat ground beef unless it's taco flavored, so I came up with this casserole we all like. To make assembly easy, I prepare the taco meat and freeze several bags at a time.
