MISSISSIPPI MUD BROWNIES
A take on Mississippi Mud Pie, these gooey, chocolaty brownies, packed with Oreo™ cookies, marshmallows, ganache and a creamy filling, are the ultimate indulgence.

Steps:
- Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
- Make brownie batter as directed on box for cakelike brownies. Stir in 1 cup chopped cookies. Spread in pan. Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
- In medium bowl, beat frosting and whipped topping with spoon until well blended. Spread over top of brownie. Sprinkle marshmallows over frosting layer. Top with remaining chopped cookies.
- In small microwavable bowl, microwave chocolate chips and whipping cream uncovered on High 45 seconds; stir. Continue to microwave in 15-second increments until chips are melted. Stir until smooth. Drizzle over top. Refrigerate about 1 hour or until chocolate is set.
- Cut into 6 rows by 4 rows. Store loosely covered in refrigerator.

- CAKE:
- Melt 2 sticks butter and 1/3 cup cocoa together. In large bowl, beat together eggs, 2 cups sugar, flour and salt. Add butter/cocoa mixture to bowl, add nuts and vanilla. Bake in greased 9x13 pan about 40 minutes at 350°F Remove from oven and cover with miniature marshmallows while cake is still hot. Let cool before adding icing.
- ICING:.
- Sift 1/3 cup cocoa, coffee and powdered sugar. Add 1 stick melted butter, milk and 1 teaspoons vanilla - beat well and spread over cake.

THE BEST MISSISSIPPI MUD CAKE EVER
This one is near and dear to my heart. This is my mother's recipe - it has to be well over 50 years old. The cake is incredibly moist and the icing turns into a fudgy layer on top. Really, really good!

- 1. Turn the oven on to 350 degrees. Grease and flour a 9x13 inch pan.
- 2. Mix together flour, sugar, soda, salt and cocoa. Then, add buttermilk, oil, boiling water, vanilla and eggs. Beat thoroughly and pour into the greased and floured pan. (If the batter seems a little thin, you are right on track! :-) Bake 35-45 minutes, testing with a toothpick to determine doneness.
- 3. Start the icing 5 minutes before the cake is done. Combine sugar, corn syrup, milk and butter in a saucepan and boil 2 minutes (no longer) then add the chocolate chips, vanilla, and nuts. Mix until the chocolate chips are melted.
- 4. Sprinkle the miniature marshmallows all over the top of the baked cake as soon as it is removed from the oven, then drizzle the hot icing mixture over the marshmallows.
