KIELBASA PASTA CARBONARA
A perfect for next day leftovers. I can whip it up and cook it in under 30 mins. Feel free to make it the day before if you are short on time.

Steps:
- Bring a pot of water to boil on the stove. Be sure to salt the water before you add the noodles- makes the noodles nice and yummy!
- In a skillet add a bit of olive oil and turn on the heat.
- Cut up 1/2 of the kielbasa and toss it into the pan.
- Smash 1-2 cloves of garlic, mince and add to the pan.
- Cut up the mushrooms when the meat is almost done add the mushrooms and peas.
- After the mushrooms are nice and golden brown add half-and-half and cheese then shimmer.
- Drain the noodles once they finish boiling.
- Add a touch of hot sauce if you like to the skillet and stir.
- In a oven safe dish add layers of sauce and noodles till everything is incorporated. Add cheese to top it off and enjoy!

- Spray pan with cooking spray and saute sausage; drain as much grease as possible. Put 1 large diced onion and one diced red bell pepper in pan with sausage and cooked until the tender; sprinkle with garlic powder. Add can diced tomatoes and tomato sauce. Cook pasta separately and add in at end of cooking time.

PASTA WITH KIELBASA AND BROCCOLI RABE

- In a heavy skillet brown the kielbasa over moderate heat, stirring, transfer it with a slotted spoon to paper towels to drain, and pour off all but 1 tablespoon of the fat. In the fat remaining in the skillet cook the garlic over moderately low heat, stirring, until it is golden, add the broccoli rabe, and cook the mixture, stirring, for 1 minute, or until the broccoli rabe is wilted. Add the water, simmer the mixture, stirring occasionally, for 5 to 7 minutes, or until the broccoli rabe is tender, and stir in the kielbasa. In a kettle of boiling salted water cook the pasta until it is al dente and drain it well. In a large bowl toss together the pasta, the oil, the kielbasa mixture, and salt and pepper to taste.

- Add olive oil to a 4-5 quart saute pan over medium high heat. Fry the smoked kielbasa and onions. Add garlic and cook until fragrant, about 30 seconds. Add chicken broth, tomatoes, heavy cream, pasta, and seasonings. Simmer for 15 minutes, or untill pasta is tender. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and cover until cheese is melted, spotty brown, and bubbly. Sprinkle with sliced scallions and serve. This only makes 4 large servings, so if you are feeding a larger group or want leftovers,I'd recommend doubling the recipe, it's well worth it! Enjoy!

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Coat a 10-cup baking dish with non-stick cooking spray.
- In large pot of lightly salted boiling water, cook rigatoni until al dente, firm but tender, following package instructions. Drain.
- In large heavy-bottom saucepan, heat olive oil over medium-high heat.
- Add onion and cook until softened, 5 to 7 minutes.
- Stir in flour, cook 1 minute.
- Gradually whisk in milk.
- Bring to boil, stirring continuously; boil until thickened, about 1 minute.
- Remove from heat.
- Set aside 1 cup of cheese for topping casserole.
- Whisk remaining 2 cups cheese, hot-pepper sauce, and salt into mixture.
- In pasta pot, combine rigatoni, cheese sauce, kielbasa and apples into baking dish.
- Cover.
- Bake covered for 30 minutes.
- Uncover and stir.
- Sprinkle with 1 cup remaining cheese and scallions.
- Bake until cheese is melted, about 10 minutes.
- Let stand 10 minutes.
- Serve.
KIELBASA AND PENNE PASTA
Steps:
- Slice the kielbasa and put in frying pan with onion and oil. Fry on med-high about 15 minutes.
- Meanwhile boil the penne pasta. When done boiling, drain, then mix with the kielbasa and onions mix. Cook about 10 minutes. Add gravy mix with little water. Enjoy!

- Combine cornstarch and low-fat milk until smooth.

- Bring a large pot of lightly salted water to a boil for pasta.
- Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
- Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.

- Heat a large pot of salted water to boil for spaghetti, cook according to package al dente, reserving 2 cups or more of pasta water.
- Heat a large, deep skillet over med heat. Add olive oil and kielbasa. Cook, stirring occasionally until brown about 3 to 4 minutes.
- Add garlic, cook stirring for 1 minute. Add sofrito, cook stirring for 3 minutes. Add chicken bouillon cube, oregano and black pepper to taste. Cook stirring for 1 minute. Add tomato paste (or tomato sauce), cook stirring 1 additional minute.
- Stir in 2 cups of water, bring to boil, then reduce to simmer stirring occasionally for 30 minutes.
- After 30 minutes, add 1 cup or more of pasta water depending on how thin or thick you like your sauce. Add drained pasta, toss to combine.
- Garnish with Parmesan cheese and chopped cilantro.
