MISSISSIPPI CHICKEN

This recipe is the best! The kids will love it and Dad too! I make in the morning before I leave for work, so when I come in from work, I just pop in the oven.

Steps:

  • Dip chicken in melted margarine.
  • Salt and pepper.
  • Then coat with crushed cheese crackers.
  • Place in baking dish and cover tightly with foil.
  • Bake in 300° oven for 1 or 1-1/4 hours.
  • DO NOT uncover until cooking time is over.
  • This is great to make ahead and refrigerate.
  • Then all you have to do is put in oven before dinner.
  • You can use whole chicken, cut up if you prefer.

5 -6 boneless skinless chicken breasts
1/2-1 cup margarine
salt & pepper
3 -3 1/2 cups cheese crackers, crushed

CHICKEN CASSEROLE MISSISSIPPI

I don't know where I got this recipe but have been preparing it for years. The sour cream in the cracker topping is what really makes it different from other casseroles I have tried. I usually serve this with peas or green beans and some garlic bread for a comfort meal on a cold day.

Steps:

  • Preheat oven to 350 degrees. Cut chicken into bite size pieces and saute chicken and onion until chicken is done.
  • Prepare egg noodles according to package directions.
  • In 9X13 casserole dish, combine chicken, onions, soup, and noodles. Mix well.
  • Combine crackers, butter, and sour cream well and spread over chicken. The mixture will be very thick.
  • Bake for thirty minutes or until top is brown.
