Mixed Up Popcorn Recipes
MIXED-UP-POPCORN
I got this from my dear friend Mindy and we refer to it as binge mix. Once you start you can't stop! Kids and adults love it. You can make it festive for any holiday or party with colored m & m's.

Steps:
- In a large bowl, stir together popcorn, cereal, peanuts and pecans. Transfer to a greased roasting pan.
- In a heavy 2 or 3 quart saucepan, combine brown sugar, butter, and corn syrup. Cook and stir over medium heat to boiling. Boil 5 minutes without stirring (make sure you boil on low heat or it will burn). Remove from heat and stir in vanilla and baking soda.
- Preheat oven to 250 degrees. Pour sugar mixture over popcorn mixture. Stir gently to coat. Bake for 1 hour. Pour onto waxed paper and cool. Store in an airtight container.
- I add M& M's after it cools to make it an extra special treat! You could even add pretzel sticks if you wanted it more salty. Enjoy!

- Prepare the popcorn in your microwave according to the instructions on the package. Meanwhile, heat the truffle butter in a small pot until just melted. When the popcorn is ready, pour it into a large bowl, add the truffle butter and salt, and toss well. Serve warm.

When our grandkids sleep over, we usually watch a movie; they like seasoned popcorn but we pefer the plain old buttered stuff! Thanx to Martha Stewart, we now spend a little quality time in the kitchen as each child "cooks up" a mix before "show time"! All of the variations can be doubled or tripled, depending on the size of the container you plan to use. The Italian mixture should be kept in the refrigerator, as it contains fresh cheese.

- Frito Pie Toss 12 cups hot popcorn, 6 tablespoons melted butter, 4 cups Fritos (or other corn chips) and 2 tablespoons chili powder; spread on baking sheets.
- Truffle Toss 16 cups hot popcorn with 6 tablespoons melted butter, 1 1/2 tablespoons truffle oil, 1/4 cup grated parmesan, 1 teaspoon kosher salt and 1/2 teaspoon pepper.
- Movie Theater Melt 1 stick butter in a small saucepan over low heat, skimming off the foam and solids; drizzle over 16 cups hot popcorn and toss with 2 teaspoons kosher salt.
- Veggie Pulse 2 cups each mixed veggie chips and dehydrated snap peas in a food processor until powdery; toss with 8 cups hot popcorn and 2 cups each veggie chips and dehydrated snap peas.
- Three-Cheese Toss 16 cups hot popcorn with 2 cups shredded cheddar, 1 cup grated parmesan and 1/2 cup grated pecorino; spread on baking sheets. Bake at 350 degrees F until the cheddar melts, 3 minutes.
- Gruyere-Porcini Pulse 1/2 cup dried porcini mushrooms in a spice grinder until powdery. Add 2 tablespoons chopped fresh parsley and 1 1/2 teaspoons kosher salt; pulse again until powdery.
