Steps:

  • Melt the chocolate- or white chocolate-almond bark (or both) in a double boiler (melt separately if using both). Next, melt the blue and orange candy melting wafers separately in double boilers. Stir them all until they are nice and smooth. These will be your marshmallow coatings.
  • One by one, dip the very tip of each lollipop stick into one of the coatings. Then stick that end of the stick into a marshmallow until it's not quite all the way through. Repeat with the rest of the marshmallows, standing them up as you go.
  • Next, roll each marshmallow in the coating of your choice, and then tap the stick gently on the side of the double boiler to get rid of the excess. Using your fingers, sprinkle the topping of your choice all over the coating. For a rocky road version, dip in the chocolate and roll in the chopped pecans. For a s'mores version, dip in the chocolate and roll in the graham cracker crumbs. For a cookies and cream version, dip in the white chocolate and roll in the crushed chocolate sandwich cookies.
  • Set the pops, stick-side up, on a piece of waxed paper, or stick them into florist foam (used to make flowers stand up).

12 regular marshmallows
1/2 cup chopped pecans
4 graham crackers, crumbled
Crushed chocolate sandwich cookies, such as Oreos, for topping
Assorted sprinkles, such as blue, chocolate and rainbow, for topping

Steps:

  • Put a large scoop of coffee ice cream in a paper cup and use a spoon to press the ice cream into the bottom and sides of the cup. Put a heaping tablespoon of the chocolate wafer cookies on top and gently press into the coffee ice cream layer. Finish with a large scoop of chocolate ice cream, pressing into the cup. Repeat with the remaining cups, ice cream, and chocolate wafer cookies. Push a wooden pop stick about a quarter of the way into the center of each pop and cover each with plastic wrap. Freeze the pops until the ice cream hardens, at least 4 hours and up to overnight. When ready to serve, gently peel off the paper cup and serve frozen.

Steps:

  • 1. Mix milk, marshmallows, chocolate and espresso powder in medium heavy pan and heat oven low heat, whisking constantly, til marshmallows and chocolate are melted and incorporated. Set pan in bowl of ice water and let stand, whisking often, til cool and thick, 15 o 20 minutes.
  • 2. Meanwhile, mix the heavy cream and vanilla in medium bowl. Whip with electric mixer on high til cream just holds stiff peaks. Fold cooled chocolate mixture into whipped cream, leaving some streaks. Spoon into dessert goblets and serve at once or cover with plastic wrap and refrigerate for up to 1 day before serving. Serves 4

3/4 cup whole or 2 % milk
4 cups mini marshmallows
3 oz. bittersweet chocolate, finely chopped
2 tsp. instant espresso powder
3/4 cup cold heavy cream
1 tsp. vanilla extract
