Steps:
- Preheat oven to 450 degrees F (230 degrees C). Grease a baking sheet.
- Whisk flour, paprika, salt, black pepper, chili powder, and cayenne pepper in a bowl. Whisk egg with milk together in a separate bowl. Dip potato wedges in the egg mixture, then dredge in the seasoned flour. Arrange coated potato wedges on prepared baking sheet. Drizzle wedges with vegetable oil.
- Bake in the preheated oven until the coating is browned and the potatoes are tender, 20 to 25 minutes. Serve immediately.

SHAKEY'S MOJO POTATOES
I don't know if you remember Shakey's Pizza but they would serve these potatoes with their famous Chicken and it was so good!! The best pizza and chicken with potatoes EVER!! Make them and let me know what you think!!

Steps:
- Bake the potatoes in the oven at 425F for about 1 hour, let cool. (I rub olive oil on my potatoes, then wrap in foil, my preference)
- Cut each potato into 1/4" rounds.
- Heat oil to 375°F
- Stir together the flour, cayenne, thyme, garlic powder, salt and pepper to taste. (you can adjust seasonings to your liking)
- Dip each potato wedge into the milk (can add egg if you want), then dredge thoroughly in the seasoned flour mixture.
- Deep fry wedges without overcrowding, until crisp and golden.
- Drain on paper towels and serve.

If you've had Shakey's Pizza, you know they're even more famous for their yummy,golden mojo potatoes.

Steps:
- Place eggs in bowl and beat add milk and butter & mix.
- Place Flour, Thyme & Cayenne in second bowel.
- Place Oil 3 inches deep in Frying Pan.
- Cut each potato into 6 (1/4-inch) Mojo rounds.
- Place MoJo rounds in egg mixture covering completely.
- Then Roll MoJo potatoes in Flour Mixture.
- Place MoJo potatoes on cookie tray while others are battered.
- Once all MoJo potatoes are battered drop in frying pan.
- Make sure oil covers the MoJo potatoes completely. If needed add more oil.
- Once golden brown, and cooked, drain oil and add all season salt.
- Serve.

- First, I scrubbed the potatoes really well. Next, I cut both ends off the unpeeled potatoes and discarded the ends. Then, I cut the potatoes into 1/4-inch slices using a sharp knife. I've found that 1/4-inch is the perfect size.
- To achieve the crispy, crunchy coating, I double dipped the potatoes in the breading mix.First, while the potato slices were still damp, I added five or six slices to the breading mix in the Ziploc bag and gave the bag a shake. I removed the potatoes from the and placed them in a single layer on a piece of parchment paper. I repeated this with the remaining potatoes.Next, I dipped five or six of the coated potato slices in the egg white/milk mixture and returned them to the Ziploc bag with the breading mix. I gave the bag a good shake to coat the potatoes. Then, I returned the double coated potatoes to the parchment paper. I repeated this with the remaining potatoes.

- Cut the unpeeled potatoes into thin slices, about 1/4 inch thick. The thinner you cut them, the more crispy (like chips) they will get. I like to cut some a little thicker and some thinner.
- Place 1-2 cups oil (about one inch deep) in a large frying pan. Heat oil over medium heat until water sizzles across the top. While oil is heating, dip potato slices in milk and coat with the fried chicken breading mix.
