MOMMA'S TWO-EGG TREASURE CAKE
Momma made great big smiles with this wonderfully moist and delicious cake! I believe it's originally a newspaper clipping, but she's used it for the past 45 years at least. Filled with your favorite fruits and icing, this cake lends itself to any special occassion. I hope you like it as much as I do! Enjoy!!

Steps:
- In a large bowl, sift together flour, sugar, salt& baking powder.
- Set aside.
- Drop in shortening, add 2/3 of milk, vanilla and mix for 2 minutes on low speed of electric mixer.
- Add one egg at a time, beating continually, add the rest of milk and mix for 2 additional minutes.
- Grease and flour two 8" round cake pans, and divide the batter evenly between the two pans.
- Preheat oven to 375 and bake for 25 minutes or until golden brown in color.
- Test the center of the cake with a toothpick; if it comes out clean the cake is done!
- Allow cakes to cool before removing them from the pans.
- Thoroughly cool before decorating.
- Note: If you only have all-purpose flour on hand, reduce amount of flour by 2 tbsp.

- You may use this recipe for cupcakes by reducing the milk to 3/4 cup.

This is a very old recipe. It uses basic items found in most any pantry.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round pans.
- Beat butter and 1 cup of sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
- In a separate bowl, beat egg yolks well, then add to butter mixture.
- Sift together flour and baking powder. Add alternately with the milk to the butter-sugar mixture. Beat well. Add vanilla.
- Beat egg whites until stiff but not dry. Add 1 cup sugar to the egg whites. Fold into cake batter.
- Divide evenly into three prepared 9 inch round pans. Bake at 350 degrees F (175 degrees C) for 25 minutes.

- In a large bowl, combine the first nine ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. - Preheat oven to 375*. Stir shortening to soften; gradually add sugar and cream thoroughly (12-15 minutes at medium-high speed, using an electric mixer). PIRATES GOLDEN TREASURE CAKE
It doesn't get any better than this, a tender, fragrant Spice Cake, served with Vanilla Ice Cream & Golden Peaches in Rum Sauce. Truly a dessert fit for the Captain and his crew.

- Spice Cake:.
- Preheat the oven to 350 degrees F (175 degrees C).
- Generously grease and flour a Bundt cake pan.
- In a large bowl, mix together the cake mix, pudding mix, spices and salt, mix well.
- Now add the eggs, sour cream, evaporated milk, vegetable oil and beat for 2 minutes, make sure it is well blended, then mix in the raisins and spread evenly into the prepared pan.
- Bake for 38 to 43 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean. Make sure to check cake at the 35 minute mark to see if it is neccessary to continue baking.
- Let the cake cool in the pan on a wire rack for 10 minutes and then invert the baked cake onto the rack and allow too cool completely.
- Golden Peaches in Rum Sauce:.
- While the cake is baking start the sauce, put a saute pan on medium heat and melt the butter.
- Now, add reserved peach juice, sugar, cinnamon and vanilla, stir until dissolved.
- When dissolved add the peaches and rum and cook until sauce is thickened, about 6 -10 minutes.
- Remove from heat and cool slightly. May be served warm or at room temperature.
- When ready to serve, slice the cake, add a scope of vanilla ice cream if using and cover with the golden peaches in rum sauce.

This is a very simple cake. I made it for my Dad when he came to visit, and he said it smelled like pancakes. I got this out of the 1953 Better Homes And Gardens New Cookbook.

- Gradually add sugar, and cream together until light and fluffy.
- Add vanilla.
- Add eggs, 1 at a time, beating well after each.

- CAKE:
- Preheat oven to 350°F. Place chocolate and butter in top of double boiler or in bowl over a pot of simmering water; heat until chocolate is completely melted. Stir in vanilla. Remove from heat. Mix flour, granulated sugar, cream of tartar, baking soda and salt in large bowl. Add chocolate mixture, milk, eggs and sour cream; mix well. Pour into greased 9-inch square baking pan.
- Bake 30 to 40 min. or until toothpick inserted in center comes out clean. Cool in pan 5 min. Remove cake from pan; cool completely.
- FROSTING:
- Beat cream cheese, butter and vanilla in large bowl with electric mixer on medium speed until well blended. Add powdered sugar gradually, beating until well blended after each addition.
- Cut cake horizontally in half. Spread bottom layer with half of the cream cheese mixture. Cover with top of cake; spread with remaining frosting. Sprinkle with coconut. Melt chocolate in microwave as directed on package. Sprinkle top of cake with almonds. Drizzle with chocolate. Refrigerate at least 1 hour before serving. Store leftover cake in refrigerator.
