These rich cookie bars are savory and sweet packed with monsterly delicious peanut butter, oats, milk chocolate chips, and candy coated pieces!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x8-inch baking pan.
  • Cream together butter and brown sugar. Mix in egg and vanilla.
  • In a separate bowl, whisk flour, baking powder, and sea salt together. Gradually incorporate dry ingredients into the butter/sugar mixture. Mix thoroughly.
  • Stir in creamy peanut butter, oats, chocolate chips, and candy-coated chocolates. Spread mixture evenly in prepared baking pan.
  • Bake until set, 25 to 27 minutes. Allow to fully cool before cutting into bars.

MONSTER COOKIE BARS

This is the bar form of one of my favorite cookies, the monster cookie! The monster cookie originated in Michigan and contains oats, peanut butter and candy-coated chocolates, and traditionally does not have flour. I love the chewy consistency and nutty flavor from the oats and peanut butter. It's kind of like a more indulgent granola bar!

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9-inch square metal pan with parchment paper that comes up on two sides to give you little wings.
  • In a medium bowl, combine the oats, coconut, baking soda, cinnamon and salt. In a large bowl, whisk together the peanut butter, brown sugar, butter and granulated sugar until combined and creamy. Add the eggs one at a time, whisking well after each. Add the vanilla. Using a rubber spatula, fold in the oat mixture until combined, then fold in the peanuts and chocolate-coated candies. Press into the baking pan. Press a few additional chocolate-coated candies into the top.
  • Bake until browned around the edges; begin checking for doneness at 28 minutes. Let cool in the pan completely, then carefully lift out of the pan and use a sharp serrated knife to slice into bars. Store in an airtight container at room temperature for a few days.

Steps:

  • Preheat oven to 350 degrees. Spray a bar pan (10 x 15) liberally with cooking spray.* In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar until fully incorporated and creamy. Add in sweetened condensed milk & peanut butter. Mix together until fully incorporated. With the mixer on low, add in flour, baking soda & salt until combined. Add in oats and mix until combined. Add in chocolate chips and stir until evenly distributed. Pour batter into prepared pan (if using 9 x 13 pan reserve 1 cup of the dough for cookies). Spread dough evenly. Bake for approximately 30 minutes until lightly golden brown and set in the middle. Remove pan from oven and place pan on a cooling rack. Let cool completely in the pan, then cut into bars and store in an airtight container. * You can use a 9 x 13 pan but you will need to remove about one cup of the dough and set it aside so that the bars cook more evenly-I did this and my bars were still a little underdone in the center but done on the edges. I made some individual cookies with the extra dough and baked them for 8 to 10 minutes. Even though my bars were a tad underdone they set up as they cooled and made the bars have a great texture and since there's no egg there is no worries about them possibly being underdone.
