MONTEITH'S BEEF & BLACK PIES
We picked up this recipe at lunch last Sunday & had been waiting all week to make it. I'm posting so as not to lose it in the junk draw... They went down a treat with the siblings. Such a simple yet elegant meal. Serve with some fresh baked buttered bread to soak up the delicious gravy. Monteith's Black is my favourite of the Monteith's range, it's a dark beer blended from five malts with biscuit, caramel, chocolate and coffee flavours - you can substitute but you wont find anything that'll come close to this wee beauty!!!

- Preheat the oven to 150c. Dust the beef chunks in 3T of the flour.
- Heat the oil in an oven-proof casserole dish & brown the meat, then add the onion, garlic and pancetta or bacon and cook over a high heat until lightly browned. Add the celery and carrot and mix through. Add the remaining flour and season with salt & pepper. Cook for a minute or so, stirring until the flour has been incorporated. Add the stock, Water, Worcestershire Sauce, Beer and the herbs and stir to combine. Place the lid on the dish, bring the contents to a boil, then carefully transfer the dish to the oven and cook for 2 hours. Remove from the oven and fish out the bay leaves with a slotted spoon.
- Preheat oven to 200c.
- Depending on how much pastry you want to use in your meal and the shape of your ramekins you can either divide casserole into 4 small oven-proof dishes & top with pastry or you can do what we did last night, stretching out the casserole to 5 studio bowls, we folded 5 square sheets of pastry to form pouches in our ramekins then filled 3/4 high with casserole mixture, then twisted the top corners of the pastry to form cute little purse-like pies. They were very effective but not so manly lol!
- Brush the tops of the pies with the egg and milk mix and bake until the pastry is golden brown, about 15-20 minutes.

- For the crust: Put the frozen rolls on a baking sheet. Cover with a tea towel and let thaw and rise for 2 to 3 hours.
- For the filling: Add the oil to a large skillet and set it over medium heat. Cook the peppers and onion until soft, about 5 minutes. Add the red pepper flakes and garlic, then cook for another minute. Transfer to a bowl or plate and set aside.
- Put the same skillet over medium-high heat, add the beef and cook, breaking up any lumps. Add the chili powder, cumin and 3/4 teaspoon salt and cook until the meat is no longer pink, 5 to 7 minutes. Add the tomato paste and 1/4 cup water and stir until combined. Mix in the cooked vegetables. Transfer to a bowl and set aside to cool. When the meat is cool, add the cheese and parsley, then season with salt and pepper.
- Preheat the oven to 400 degrees F.
- To form: Roll out each dinner roll on a lightly floured surface into a 4-inch circle about 1/4 inch thick. Put 1 1/2 tablespoons of the meat mixture in the center of each circle. Brush around the outside of the circles with the egg wash and fold over the dough to form half-moon shapes. Press the edges together and crimp them with a fork. Put on a parchment-lined baking sheet and brush the tops with the egg wash.
- Bake until golden brown, 10 to 12 minutes.
BEEF WITH BLACK OLIVES PIE
Making this pie is a joy, as the smell of the Moroccan spices fill the house. If you like a bit of heat, add a teaspoon of harissa with the spices. It is also fabulous served with saffron mash. Recipe from the book Sophie Conran's Pies.

- First make the filling. Heat the oil in a large casserole on a high heat. Coat the meat in the seasoned flour and fry until browned all over. Remove the meat from the pan and set aside.
- Reduce the heat and add the butter to the pan. Stir in the onions and gently stew for 10 minutes or until translucent. Keep checking and stirring to make sure the onions do not burn.
- Throw in the garlic, parsley and spices, and stir for a couple of minutes. Return the meat to the pan, then pour in the tomatoes, olives and water.
- Stir through the tomato paste.
- Mash up the tomatoes a bit with your spoon and scrape the bottom of the pan to keep it from sticking. Gently simmer for 2 hours - keep checking to make sure it does not burn or stick to the bottom of the pan and give it.

- While it is simmering, prepare the pastry. Mix all the dry ingredients together in a large bowl.
- Rub in the butter between your thumb and fingers until it looks like breadcrumbs. Add the milk a little at a time and combine until you.

- Depending on the type of flour you are using, you may need a little more or less milk than suggested. Roll the dough into a ball, cover it in cling film and pop it in the fridge until needed.
- Preheat the oven to 425°F Once the filling has finished simmering and is an aromatic tender stew, with a nice thick rich sauce, remove the cinnamon stick.
- Taste the filling and season it with salt and pepper accordingly. Pour the mixture into a medium pie dish.
- Roll out the pastry to make a lid for the dish. Brush the edges of the dish with water so the lid will stick.
- Cover the dish, press down the edges and trim. Cut a small hole in the top to let the steam escape, and bake the pie for 20 minutes.
- I like to serve with boiled sweet potatoes, tossed in butter and chopped fresh parsley.
GOOD OLD MEAT PIE
A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef. A great recipe for leftover meat!

- Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
- Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
- Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

CANADIAN MEAT PIE
This hearty meat pie has a filling seasoned with a tasty combination of herbs and spices and is topped with a flaky golden crust. Called tourtiere, it's a dish traditionally served by French Canadians following mid-night Mass on Christmas Eve.

- In a large bowl, combine flour and salt. Cut in shortening until the mixture resembles coarse crumbs. Add egg and water; toss lightly with a fork until dough forms a ball. Divide dough in half; wrap in plastic and refrigerate. , In a large skillet, cook beef, pork, onion and garlic over medium heat until meat is no longer pink; drain. Stir in seasonings; heat through. , On a floured surface, roll out one portion of dough. Line a 9-in. pie plate with bottom pastry. Spoon filling into crust. - Place 1 tbsp of oil in a large heavy based pot over high heat. Add half the beef and sear until the outside is lightly browned. Remove from the pot into a bowl and repeat with remaining beef.
- Lower the heat to medium high and add the remaining olive oil. Add the onion and garlic and sauté until the onion is translucent - around 5 minutes.
- Return the beef to the pot along with all other Filling ingredients other than the cornstarch / cornflour and water. Mix to combine. The liquid should be just enough to cover most of the beef but there should be a bit protruding through the surface.
- Bring to a simmer, then lower the heat to low / medium low so it is bubbling very gently. Leave to cook for 50 minutes to 1 hour, stirring occasionally, or until the beef is very tender. Because the beef is cut so small, it shouldn't take much longer than 1 hour. If the liquid evaporates too quickly, just add a bit more water.
