MONTEREY BARBECUED CHICKEN
Linda Coleman of Cedar Rapids, Iowa turns regular chicken into a savory dish with barbecue sauce, crisp bacon and melty cheese. It gets even better with a sprinkling of fresh tomatoes and green onions.

- Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until cooked but not crisp. Remove to paper towels to drain. , Drain drippings from skillet; cook chicken in butter over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. , Top each chicken breast with the barbecue sauce, green onions, tomato and two reserved bacon pieces; sprinkle with cheese. Cover and cook for 5 minutes or until cheese is melted.

Steps:
- To Marinate: Place chicken in a nonporous glass dish or bowl. Pour marinade over chicken and toss to coat. Cover and refrigerate to marinate for 1 to 2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove chicken from the marinade and place in a 9x13-inch baking dish. Reserve 1/3 cup marinade and discard the rest.
- Bake chicken in the preheated oven for 20 to 30 minutes, or until cooked through and juices run clear.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In same skillet, melt butter over medium high heat. Saute onion, bell pepper and mushrooms for about 3 to 5 minutes. Add reserved 1/3 cup of marinade and simmer until soft. Drain and set onion mixture aside.
- Top baked chicken with bacon strips. Add onion mixture and top each breast with a slice of cheese. Bake for another 10 to 15 minutes, or until cheese is melted and bubbly.

- Preheat oven to 300 degrees F (150 degrees C). Lightly grease a medium baking dish.
- Melt 1/4 cup butter in a medium skillet over medium heat. Stir in onion, mushrooms and garlic. Cook until tender, about 10 minutes. Stir in 2 tablespoons flour, chicken stock, celery salt, white pepper and white wine. Reduce heat to low, and cook, stirring frequently, until thickened and well blended, about 10 minutes. Mix 1/2 cup Monterey Jack cheese into the thickened sauce mixture, and stir until melted.
- In a shallow medium bowl, mix 1 cup flour with salt and pepper. Dredge chicken breast halves in the flour mixture to coat. Melt remaining 1/4 cup butter in a large skillet over medium high heat. Cook chicken until lightly browned on all sides. Arrange breast halves in the prepared baking dish, and cover with the sauce.
- Top chicken breast halves with remaining Monterey Jack cheese. Bake in the preheated oven 25 minutes, or until chicken is no longer pink and juices run clear.

Steps:
- At least one hour or even a day ahead of time, make the Salsa Topping.
- Mix Salsa ingredients in a small bowl, chill.
- In a 13x9" baking dish, place the chicken, (not touching) and dot with Butter.
- Bake at 350° for 30-45 minutes, or until done.
- While chicken is cooking fry bacon and shred the cheeses.
- When chicken is fully cooked, remove from oven.
- Turn oven up to 425°F (*Unless you prefer the broiler).
- Spread the barbecue sauce on chicken, then the bacon and then add cheeses.
- Place the baking dish, back into the hot oven* or under the broiler for a few minutes until cheese is melted and bubbly, plate and top with the chilled Salsa Topping.

- In small bowl whisk together mustard, honey, 1 teaspoon salt, and ½ teaspoon pepper. Reserve ¼ cup of honey-mustard mixture for basting chicken. Place chicken into gallon-size zipper-lock bag and pour rest of honey-mustard mixture in. Zip bag and shake to coat chicken, and chill for at least 30 minutes or up to 2 hours.
- Move oven rack to middle position and preheat to 350 degrees F. Lightly spray 9x13-inch pan (or any other 3 quart baking dish) with nonstick cooking spray. Place chicken in pan and top with onion slices. Cover with foil and bake for 35-40 minutes, or until chicken is no longer pink and juices run clear.
