MINTED CUCUMBER SALAD

Fresh herbs and a light vinaigrette season the garden-fresh cucumbers and tomatoes in this easy salad. I'm a busy pastor's wife and mother and am always looking for new recipes that can be prepared quickly but don't sacrifice taste or nutrition. -Debbie Purdue, Westland, Michigan

Minted Cucumber Salad image

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, whisk the lemon juice, oil, salt and pepper. Add to cucumber mixture; toss to coat.

2 large cucumbers, chopped
2 cups seeded chopped tomatoes
1/2 cup chopped fresh mint
1/2 cup chopped fresh parsley
1/2 cup thinly sliced green onions
1/4 cup lemon juice
1/4 cup olive oil
1 teaspoon salt
1/4 teaspoon pepper

NOTE: Oil in the pan is optional and think on a George Forman grill would make for an even nicer presentation, but the taste is yummy! RE the Moroccan seasoning, can make your own or store bought NOTE: I used french vanilla yogurt; personal taste NOTE: Can use less coriander in patties and in salad; personal preference really

Moroccan Patties With Minted Cucumber Salad image

Steps:

  • Grate zucchini and onion; remove excess moisture with a paper towel.
  • Finely dice 1/2 red onion; finely slice remanining onion for salad.
  • COMBINE mince, zucchini, onion, garlic, currants, coriander in bowl to hamburger consistency; MIX WELL.
  • NOTE: May need to add up to 2 tbsp bradcrumbs but want mixture to be moist.
  • I use an egg ring to make 100 gram patties; but feel free to make them any size or shape you prefer.
  • FRY patties in fry pan.
  • NOTE: Have made them with and without oil and find without oil, they brown better in a hot pan.
  • COMBINE cucumber (sliced on an angle), finely sliced onion, mint sauce, yogurt and 1/4 cup coriander.
  • Serve with rissoles and ENJOY!

Mint, lime & cucumber salad image

Steps:

  • Finely slice half of the cucumber into a large bowl. Cut the skin off the lime, then cut out the segments. Add these to the bowl and squeeze any juice out of the bit left in the middle. Add the vinegar and sugar, cover and leave in the fridge.
  • When ready to serve, slice and add the remaining cucumber, the mint and the chilli and toss together. Season with salt and a touch more vinegar if you like.
