MOROCCAN SPICED OLIVES

An easy marinade of garlic, lemon, thyme, and a dollop of the North African hot sauce harissa make these green olives memorable. If you can, prepare the olives ahead-they improve with age. From Epicurious. Cooking time does not include the 24 hour marinating period.

Moroccan Spiced Olives image

Steps:

  • Cover olives with water in a small saucepan and bring to a boil, then drain.
  • Cook garlic in oil in a 10-inch heavy skillet over medium heat until garlic is golden, about 2 minutes. Add tomato paste and cook, stirring, 1 minute. Stir in water, harissa, thyme, and olives and simmer briskly, stirring occasionally, until liquid is thickened and coats olives, about 5 minutes. Remove from heat and stir in lemon slices. Transfer to a shallow dish and marinate, chilled, at least 24 hours.
  • These will keep for 1 month if kept in an airtight container in the refrigerator.

2 cups green olives in brine, lightly smashed to crack open slightly (use picholine or cerignola if possible)
4 garlic cloves, sliced
1/4 cup olive oil, extra virgin
2 teaspoons tomato paste
1/3 cup water
2 teaspoons harissa (North African spice paste)
3 fresh thyme sprigs (4-5 inches long)
2 thin lemon slices

TAKE-OUT MOROCCAN CHICKEN WITH PRESERVED LEMONS AND GREEN OLIVES

Lemons preserved in salt and lemon juice are a common ingredient in many classic Moroccan dishes. Preserving them in this fashion captures their essence and enlivens this intricately spiced chicken braise. Green olives add further color and interest to a dish that would make a wonderful centerpiece to any Moroccan meal. The warm hues and complex flavors make this standout dish perfect for any occasion. Note that the preserved lemons need to be made a week in advance. That time is not included in the preparation time From the Take-Out Menu Cookbook.

Take-Out Moroccan Chicken With Preserved Lemons and Green Olives image

Steps:

  • Prepare the preserved lemons as directed in the recipe.
  • Pat the chicken dry, then season with salt and pepper. Heat 1 tablespoon of the oil in a 12-inch saute pan set over moderately high heat. Saute the chicken until golden brown, about 3 minutes on each side. Transfer the chicken to a plate and keep warm, covered.
  • Add the remaining tablespoon of oil to the pan and reduce the heat to medium. Add the onion and garlic and cook for 3 to 4 minutes. Add the ginger, paprika, turmeric, saffron, and 1/4 teaspoon pepper and cook for 1 minute, stirring.
  • Add the chicken and stock to the pan, reduce the heat to low and simmer for about 40 minutes, or until the chicken is tender.
  • Scrape the pulp from the preserved lemons, and discard or reserve for another use. Cut the lemon rind into slivers and add to the chicken, along with the olives.
  • Cook for 5 minutes, uncovered.
  • Transfer the chicken to a serving dish and spoon the olives and lemons around them. Add the lemon juice, taste for seasoning, and add more salt if necessary.
  • Pour the sauce over the chicken. Sprinkle with the parsley and cilantro and serve.
  • Make ahead: This dish can be made up to 2 days ahead and kept covered in the refrigerator. Reheat on the stove over low heat until warmed through.

1 whole chicken, quartered
salt & freshly ground black pepper
2 tablespoons olive oil
1 large onion, finely chopped
4 garlic cloves, finely chopped
1 teaspoon ground ginger
1/2 teaspoon sweet Hungarian paprika
1/4 teaspoon turmeric
1 pinch saffron
1/4 teaspoon fresh ground black pepper
1 cup chicken stock
16 green olives, pitted and halved
2 tablespoons fresh lemon juice
2 tablespoons finely chopped flat leaf parsley
2 tablespoons finely chopped fresh cilantro

MARINATED MOROCCAN OLIVES

Olives are abundant in Moroccan cuisine; often times they are marinated in olive oil and lemon, or in a Moroccan hot sauce called "harissa" (which is made from red chilis, garlic, coriander and cumin). For my olives, I am combining the best of both worlds by marinating the olives in lemon and olive oil, plus some of the seasonings found in harissa.

Steps:

  • In a medium sized mixing bowl, combine olive oil, pepper flakes, garlic, coriander and cumin. Squeeze the lemon juice and add the lemon wedges, the olives, and mix well.
  • Cover and refrigerate overnight. Leave out at room temperature for a few hours before serving.

1 cup black olives
1 cup green olives
1/2 teaspoon ground cumin

1/4 cup olive oil

Steps:

  • Over medium heat, warm oil in a large skillet.
  • Add garlic and cook, stirring often, for 3 minutes until fragrant.
  • Remove garlic and discard
  • Add rosemary, thyme and hot pepper flakes.
  • Cook, stirring often, for 2 minutes.
  • Add olives, continue to stir and cook for only 2 or 3 minutes, just until until olives are warm.
  • Stir in lemon peel.
  • Serve and enjoy!
