I've been making this mostaccioli dish for years and everyone asks for a copy of the recipe. Easy to make and great leftover.

Steps:
- Heat oil in large pot over medium-high heat. Add sausage and cook and stir until almost browned, about 5 minutes. Add onion and garlic and cook until tender, about 5 minutes. Draining really isn't necessary. Add tomato sauce, basil, parsley, and pepper; heat to a mild boil. Reduce heat and simmer for 15 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Remove sauce from heat and stir in salad dressing. Pour desired amount over pasta and serve.

- Heat the canola oil in a large pot over medium heat. Stir in the onion and red pepper, and cook until the onion has softened and turned translucent, about 5 minutes. Add the pork sausage, cook and stir until the sausage is crumbly and browned, about 10 minutes. Drain off and discard any excess fat, then stir in the crushed tomatoes, garlic powder, Italian seasoning, sugar, salt, and pepper. Bring to a simmer over medium-high heat, then reduce the heat to medium-low, cover, and simmer 20 to 30 minutes until the sauce has reached your desired consistency.
- Meanwhile, bring a large pot of lightly salted water to a boil over high heat. Add the penne pasta, and cook until al dente, 8 to 10 minutes. Drain the penne, then toss with the red sauce and Italian cheese blend. Stir until the cheese has melted. Season to taste with salt and pepper before serving.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.

MOSTACCIOLI (BAKED PASTA WITH CREAMY SAUCE & ITALIAN SAUSAG
Yummy pasta -- It makes a lot (2 9x13 pans) but could be easily halved. Everyone in my office is RAVING about this this week, and it's great b/c it can be adjusted to your own liking.

Steps:
- Cook both boxes of noodles until they are semi done.
- Drain and set aside, but do not rinse.
- Melt 1 Tbsp butter in a saucepot.
- Add minced garlic (more or less if desired).
- Slowly add heavy whipping cream to melted butter and garlic mixture.
- Bring sauce to a slow simmer, then add 2 cups shredded Parmesan cheese.
- Stir until melted.
- Let sauce simmer on low.
- Break into pieces and brown Italian sausage.
- Add 2 thinly sliced peppers to meat mixture.
- When both are fully cooked, dump them into the sauce.
- Saute sliced mushrooms in 1 Tbsp butter seasoned with salt and pepper.
- When cooked, add to sauce.
- Place tomatoes in a food processor and process until blended with chunks.
- Add fresh basil to taste (don't be stingy - a lot is better).
- Add diced garlic to taste.
- Add olive oil.
- Don't be afraid to start small and add more basil, garlic and oil as you go.
- This tomato mixture can be made a day early; let set in refrigerator overnight.
- Add this dish to the sauce.
- Bring the huge pot to a boil, let it simmer just a minute or two.
- Take the penne noodles and divide them into the two 9x13-inch pans, spreading them out evenly.
- Divide sauce into each pan filled with the noodles and mix it with the noodles.
- Sprinkle Parmesan cheese over the top of both pans.
- Bake, uncovered, at 350 degrees for 20 to 25 minutes.
SAUSAGE AND MOSTACCIOLI WITH RICH CREAM SAUCE

- Melt butter with oil in heavy large skillet over medium-high heat.
- Add sausage, onion and garic and saute until golden brown and tender, about 7 minutes.
- Drain any excess dripping from skillet.

- Bring 4-5 litres of water to the boil in a large pasta pot. Add pasta, stir to separate and cook for 10-12 minutes or until pasta is tender. Drain well and place in a large mixing bowl.
- Heat oil in a large pan over high heat. Add the sausage pieces to the pan and cook for 3-4 minutes or until golden and cooked through. Remove and set aside. Add mushrooms to pan and cook over high heat until cooked, about 3-4 minutes. Set aside with sausages.
- Reduce heat and add butter to pan. Add onion and garlic and cook gently for 2-3 minutes or until softenened. Add the semi dried tomatoes, water or stock. - Cook pasta according to package direction. In a large skillet, cook sausage in oil and butter over medium heat for 5 minutes. PENNE WITH SAUSAGE IN CREAMY TOMATO SAUCE
This is an easy recipe with tons of flavor, rigatoni pasta can be used in place of penne. If you are using spicy sausages then omit the chili flakes. Try to use only high-quality canned tomato products, it will really make a huge difference in your sauce, no no-name brands for this! With this sauce (and any tomato-based sauce) it needs some time to cook, the longer you cook the sauce uncovered the thicker and richer it will be, you can even start it in the morning turn it off then continue cooking later, cook for even 2 hours!

- In a large skillet heat oil over medium heat.
- Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 minutes) using a slotted spoon remove to a bowl and leave some fat in the skillet.
- Add in the onion, chili flakes, basil and oregano; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
- Add in tomato paste and stir 1 minute.
- Add in the wine and simmer for 6-8 minutes over medium-low heat, or until it almost evaporates.
- Add in the cooked sausage meat along with the crushed and chopped drained tomatoes.
- Add in 1 tablespoon salt.
- Simmer uncovered for about 1-1/2 hours over low heat, stirring with a wooden spoon occasionally.
- Season with more salt if desired and black pepper.
- Stir in the cream and heat through over low heat.
- Just before the sauce if finished cooking, cook the pasta in boiling salted water until just al dente (do not rinse the pasta with water).
- Serve the sauce with cooked pasta, sprinkle with grated parmesan cheese on top.

- Bring a large pot of lightly salted water to a boil. Add mostaccioli and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.

- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes.
- While the pasta is cooking, heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Sprinkle seasoned salt over the mixture while cooking. Drain and discard grease.
