STRAWBERRY-BANANA SHERBET
Sherbet is lighter than ice cream and richer than sorbet. It's made from a frozen mix of sweetened fruit juice and water that's often fortified with milk, cream, egg whites, syrup, or gelatin to impart a smooth, soft consistency.

Steps:
- Place strawberries in a large bowl. Using a potato masher, mash strawberries, and set aside.
- Place bananas and sugar in a medium bowl. Using the potato masher, mash until smooth.
- Add banana mixture to strawberries, and mix well. Stir in orange juice, lemon juice, and milk. Divide the mixture among four metal ice-cube trays, about 2 cups per tray. The sherbet can also be poured into a 9-by-13-inch glass baking dish and placed in freezer. Stir every 30 minutes until frozen, about 4 hours.

- Bring to a boil, then remove from heat and allow to cool.
- When the sugar syrup is cool, stir in bananas.
- Pour into a freezer- safe baking dish.
- Freeze for 3 to 4 hours, until set at the edges.
- Remove from the freezer and transfer to a mixing bowl.
- Use an electric mixer to beat until smooth.
- Return to the freezer until gently set, at least 2 hours.

A light, fruity and healthy summer dessert. It's a great way to get your family to eat their fruit, but it is also fancy enough for company. I believe I got this recipe from a TV cooking show a few years ago.

- Roughly mash the strawberries, leaving some chunks. Stir in sugar or Splenda. Mash bananas and add to strawberries. Mix well. Add orange juice and lemon juice. Stir in milk and blend well.
- Pour mixture evenly into 4 ice cube trays. Set trays on a cookie sheet (if desired) and set in freezer. Freeze solid.
- When ready to serve, put sherbet cubes in fancy dessert glasses. Let set a few minutes to thaw slightly.
- Note: You could also make these into popsicles for the little ones by putting sticks into them before freezing.

MOM'S BANANA BREAD
Growing up, I loved the taste of my mom's fresh banana bread. As do my children. Always- such a great, tasty way to use up those overripe bananas. My sister adds chocolate chips to her's. Also tastes great as muffins with cream cheese frosting!

- Cream sugar and butter.
- Add eggs, beat well.
- Add rest of ingredients.
- Pour into loaf pan.
- Sprinkle walnuts over top.
- Bake at 325 degrees for 1 hour 20 minutes. Or until toothpick comes out clean.
- Keep in pan 10 minutes then put on wire rack until completely cooled.
- Muffins- 325 degrees for 25 minutes.
- Mini Muffins- 325 degrees for 15 minutes.

MOTHER'S BANANA BREAD
This is an old recipe that belonged to my mother. I've been making this bread since I was a teenager. At a candy striper bake sale a doctor bought this bread and said that this was the best banana bread that he had tasted.

- Grease an 8x4 inch loaf pan. Preheat oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, sift together flour, baking powder, baking soda, salt, and sugar. Add butter, eggs, nuts, and mashed banana. Beat until well blended.
- Pour batter into prepared pan and bake about 1 hour, or until a toothpick inserted in the center of the loaf comes out clean.
