Coconut Thai Marinade image

Steps:

  • In a blender or food processor, puree ingredients until smooth, about 30 seconds. Arrange meat in a shallow nonreactive dish or resealable plastic bag. Add marinade; rub gently into meat. Cover; refrigerate for time specified below, turning meat occasionally.
  • Before cooking, remove meat from refrigerator and let it come to a cool room temperature. Cook as desired, basting occasionally with marinade during the first half of cooking.

4 garlic cloves, coarsely chopped

  • Combine all ingredients except tuna in a non-metal bowl and mix well.
  • Add tuna and coat with marinade.
  • Chill 2 hours or overnight.
  • Remove tuna from marinade and cook over hot coals or gas barbecue on high 1-2 minutes on each side (for rare) or until desired done-ness. Serve immediately.

This recipe incorporates a thai-like flavour from the vibrant chilli and soy sauces aswell as the rice vinegar. For the chilli sauce I used Frank's Red Hot sauce. (If you dont have this i recommend any chilli sauce that is spicy, thick and peppery. This chicken can be marinated for up to 24 hours and can be done on a grill or barbeque for a nice glaze, or simply thrown in the oven for a quick yummy meal with some veg.

Thai Chilli Marinated Chicken image

Steps:

  • Firstly Get a bowl big enough to fit the ingredients inside. Place the Chicken in the bowl (I used chicken breast but you can use basically anything).
  • Prepare the marinade. Firstly zest the lime and squeeze the lime juice into a bowl. Add the remaining ingredients to the marinade.
  • Pour the marinade over the chicken and seal it in the fridge. I usually leave it between 1-24 hours depending on when I want to eat it. You can either put this in the oven at 180c for 20-25 minutes or you can grill/barbeque it. If you are using the oven, it will not caramelise however, if you are grilling/barbequeing, it will form a nice glaze over the meat. Serve this with whatever you want (I usually have rice and vegetables with it)

A delicious marinade for flank steak blending the flavors of crushed coriander seed, lime juice, and soy sauce. This marinade can be used well with other meats as well. Serve over rice or shredded Chinese cabbage and red pepper slices.

  • Whisk coriander, brown sugar, soy sauce, lime juice, garlic, and ground ginger together in a bowl until marinade is well combined.

  • Add the chicken and marinate overnight. I find that overnight (or even up to 24 hours) marination gives the chicken optimal flavor.If you are pressed for time, marinate for at least 2 hours. You may also want to make small slits in the meat or make small holes with a fork as this will allow for quicker marinade penetration inside the meat.
  • After marination, remove excess marinade from the chicken pieces and grill over direct heat on a grill preheated to about 325F. As there is sugar in the marinade, make sure to keep an eye on the chicken and flip frequently to avoid burning. If using a charcoal grill, grill with a lid on to avoid flareups.
